does anyone know any good tips for cooking silver side to make it juicy?

I like to seal the outside edges in a pan with a little oil [this keeps the juices in] then place in a large heavy bottom saucepan, add thick sliced onion, celery and carrot, don't put salt or vinegar because it is already salty. simmer this for a hour or so, till you can cut it and see no blood coming out, then add potatoes, more carrots, onions and celery, when this is cooked add salt and pepper to taste, serve as a stew
