Lemon Rice: Sautee half a large onion in butter 5 minutes. Add 2 cups of rice, four cups of water, 1 tablespoon of butter and 2 tablespoons of lemon juice. Cover, simmer 20 minutes, add 1 tablespoon of parsley and serve. Originally a mediteranean recipe.

Raisin Rice (unsure of original name): Prepare rice as directed, adding 1 tablespoon of butter and 1 cup (or so) of raisins in the beginning. Sprinkle with cinnamon before serving. Dish from my childhood, often made in Africa.

Curry Alfredo: Prepare penne noodles as directed. Melt 1 tablespoon of butter in saucepan. Add one cup of cream and half a cup of parmesan cheese. Bring just to a simmer, stirring often. Add 1 tablespoon of pesto (storebought or pre-made), approximately 2 ounces of sun dried tomatoes, a dash of cayenne pepper and about a tablespoon of curry. Pour over penne and enjoy. A blend of Indian and Italian cuisine.

I hope you meant vegetarian, and not vegan...
