How would you say the casual greeting of:
"Hello, how are you."
"I am fine."
"Oh, that's good to hear, by the way my name is...blank."
"nice to meet you, Blank, my name is Such and such."
or something like that, working on putting Italian sentences together and i'm just trying to get the hang of it. i'm just curious how to greet someone in the language

Dear, the most frequent Italian greeting (used both as "Hello" and "bye") is " Ciao".

"Hello, how are you?" is "Ciao, come stai?".
"(Io) Sto bene, grazie" or " Va bene, grazie" is the answer, meaning " I am fine, thanks".
"Piacere di conoscerti.., Io mi chiamo.." is " Nice to meet you, my name is....".
"Il piacere e tutto mio" is " It's all my peasure".

When we refer to people we know well, a dear ones, friends, family members we use " Tu" ( you) , but in Italian language we have also the polite form "Lei" ( you) , we use when we talk to strangers, people we don't know well, showing our respect.
The above examples, are limited to "Tu", not the polite " Lei".
Said in the polite way they will be:

"Lei (signore) sta bene?", " Do you feel fine? ( to a male).
" Come sta?", "How are you?" (polite).

Other simple and very useful expressions:

"Come ti chiami?" is "What's your name?"
"Come si chiama?" is "What is your name?" ( polite form)
"Mi chiamo..." is "My name is.."

"Di dove sei?" is " Where are you from?"
"Di dove e?" is "Where are you from?" ( polite form)
"Io sono.." ( inglese) is "I am..." ( english).

General greetings:

"Ciao"= "Hello", "Hi", and also "Bye"
"Salve!" = "Hi"
"Benvenuto"= "Welcome" ( toward a male), "Benvenuta" to a female and "Benvenuti" in plural.
"Prego"= "Please,.."
"Grazie"= Thank you
"Tante belle cose"= "Wish you all the best"
"In bocca al lupo"= "Good luck" ( very frequently used and nice)
"A domani"= "See you tomorrow"
"A dopo"= "See you later"
"Arrivederci" =" Bye"
"Arrivederla" = "Bye" (too polite way)

"Hello, how are you ?." is "Ciao,come stai ?" or "Ciao,come va ?"
"I am fine." is "Sto bene" but better saying "Bene, grazie" or "Va bene,grazie"
"Oh, that's good to hear, by the way my name is...blank."
can be translated (not literally) as " Ah, bene a sapersi.A proposito, mi chiamo ....."
"Piacere di conoscerti..., io mi chiamo..."
In Italy we do use 'mi chiamo...' better than 'il mio nome è..." that's however correct.
And at this point answer should be "It's my pleasure" that's "il piacere è (tutto) mio".
Other greetings :

Ciao a tutti = Hello to everybody
Ci vediamo (or 'A presto') = See you soon
Buongiorno = good morning
Buon pomeriggio = Good afternoon
Buonasera = Good evening
Buonanotte = Good night
Sei molto simpatico (to a male) or
Sei molto simpatica (to a female) = You're very nice
A domani = see you tomorrow
A dopo = see you later

for others you can quietly use those here above by Sunflower since all of them are correct standard Italian.
