Well I have some great ideas . Since mardi gras is is colorful and so is spring i would same make colorful food . Here is a menu of what you should make .

I would have a 7 layer dip that you can buy at your grocer with the color tortilla chips . So you now you have your appetizer .

I would do kabobs . Buy some red green yellow and orange bell peeper . purple onion and some pineapple . marinade . get the ones you buy in the bottle you will find those were they carry the ketchup and salad dressing . Get like a terryoki or a honey BBQ glaze . then buy some chicken and shrimp . marinade the shrimp and chicken in that for an hour. Put on counter not in the fridge you want your meat at room temp for grilling on the grill . Gets the juices flowing more . By the way cut chicken in cubes for the kabobs then marinade . but your kabobs together and grill i would have a fruit salad with it for desert and make strawberry and regular margaritas for your drink . Tada . Hope you enjoy and happy mardi gras .

The real Mardi Gras is over, but Universal Studios in Orlando is still celebrating for a few more weeks with parades and concerts. Try any Cajun foods like jambalaya, dirty rice, spiced up seafood dishes using shrimp, crawfish and lobster. Food network.com (look under Emeril because he does some cajun dishes sometimes) and all recipes.com would be a good place to look for these.

Gumbo [GUHM-boh] This CREOLE specialty is a mainstay of New Orleans cuisine. It's a thick, stewlikedish that can have any of many ingredients, including vegetables such as okra, tomatoes, and onions, and one of several meats or shellfish such as chicken, sausage, ham, shrimp, crab or oysters. The one thing all good gumbos begin with is a dark roux, which adds an unmistakeable, incomparably rich flavor. Okra serves to thicken the mixture, as does FILE POWDERwhich must be stirred in just before serving after the pot's off the fire.

File Powder [FEE-lay] Comes from dried leaves of the sassafras tree. It has become a integral part of CREOLE COOKING and is used to thicken and flavor GUMBOS and other Creole dishes. File has a woodsy flavor reminiscent of root beer. File must be stirred in after removed from the heat because ndue cooking makes it tough and stringy. File powder can be found in the goumet or spice section of most of your larger grocery outlets.

Combine the following in a pot and mix while cooking over low heat, for Mardi Gras. 22 ounces condensed cream of asparagus soup, 22 ounces of cream. Chop six young asparagus spears into small pieces and add them, cooking until they are tender. Add two tablespoons of diced pimentos just before finishing the soup. Also add one dash of cayenne pepper. Then, chill the soup four hours. Garnish with one half cup of cheese croutons. Guess who with Coretta Scott got kinky using this recipe? Hammercy!

King Cake is a must and you have to hide a baby in the cake.
You can buy King Cakes on line from New Orleans.

Sazerac cocktails are a must at Mardi Gras

I bow to JDub with the suggestion of Hurricanes and so forth.

My etouffe recipe is too long to print here and so is my gumbo but Emeril has good recipes for them on the Foodnetwork site.
