Absolutely! According to the Carnation website it will make your pudding more creamy and thick like homemade pudding. Use it exactly like you would use regular milk. Here is the link to the site. Check out how many GREAT reviews there are for using evaporated milk instead of regular milk.

Sure. To make regular strength milk from evap milk just use 1/2 Evap milk and 1/2 cold water. So if you need 2 cups of milk use 1 cup of evap and 1 cup of water.
Mix them first to make "regular" milk and then add to the pudding mix as usual. Don't add the evap milk to the pudding and then the water. It doesnt work as well and is harder to mix in my experience.
I like it better with 2/3 evap milk and 1/3 water.. a bit creamier... so 1 1/3 evap and 2/3 water for 2 cups.

2 parts milk :1 part water or 1 part milk :1 part water
