Symtoms of dehydration:
dry lips/mouth, sunked eyes, irritability, lethargic, no tears when crying and dry and sticky mucus in the mouth
Try giving her pedialyte, or at Walgreens, they have Carebear Pops which are made for kids who are slighty dehydrated. If she has any of the symtoms of dehydration, and wont take a sippy, call her doctor immidiately. He could have you take her to ER and give her an IV(i had to have one when I was little, and really dehydrated, so dont worry if you have to do this, it is just a much faster way of getting her hydrated before it becomes a severe problem).
Make sure you are giving her a vitamin, if you arent giving her one everyday already.
I hope she feels better soon.

The quickest and easiest way to tell is the colour of her urine - if it is dark and has a strong smell you can be pretty sure she hasnt got enough fluids in her. If she hasnt had many wet nappies/gone to the toilet much, then again its a sign she hasnt got enough to be putting any out.
You will also notice she is lethargic (and this can be from the strep so its not a great indicator).
Try not to panic about it though - offer fluids in all sorts of way - using a syringe (you know the big ones you can use for medicine?) an ice block or piece of ice, or letting her drink from your drink.
When my daughter had a high fever recently, the only way she would drink was if we rinsed out a wild turkey bottle of my husbands, filled it with water and let her sip "daddy's juice"...she also had a few good sips of my cup of tea and I didnt care what she drank as long as she had something!!
Good luck with your little girl - I know its scary when they get sick and wont eat or drink properly, but the best thing to do is not to panic and to try everything before taking her to the hospital.

The colour of her urine. It should be very pale and wheat coloured to clear. The darker and more yellow it is the more dehydrated she is. Try to get her to drink more fluid. Mix a little fresh fruit juice with water to encourage her to drink it. It will take her body longer to fight infection if she is dehydrated. Try to feed her fruit instead of junk food too as fruit is full of water and doesn't contain salt, which will dehydrate her further. However if the fries and chicken is all she will eat when her throat is sore then it's better that she has this than nothing obviously

Gently pinch the skin on her arm or hand. If it stays wrinkled for a second or two, rather than immediately becoming smooth again, she's dehydrated. Other signs, when they sit up or stand up, they get dizzy and wobbly.
Don't disregard dehydration, it is a killer.

Poor baby. Is the inside of her mouth dry? That is another indicator. Give her some tylenol to take down the fever and help her not hurt. And yeah, treat her to all the popsicles, freezies and jello she wants. Don't worry if she's not eating...just try to keep her drinking. Give it to her however she wants it, and whatever fluid she wants, except for pop...

Dark urine is probably the easiest. Or not peeing for a certain amount of time. I know for babies it's 6 hours, I don't know what it would be for a two year old.
Have you tried some popsicles or jello? (Jello counts as liquid)

Pinch the skin on the back of her hand (GENTLY!). If she is not dehydrated the skin will go flat again as soon as you let it go. If she is, it will stay pinched for a second or two.
I can't believe you are feeding a sick child on junk food.

just a suggestion if she is dehidrated there are now ice blocks available to replace the electrolytes in their bodies. They come in both orange and rasberry flavours and can usually be found in the local chemist.
