Unless you are sending an encrypted email, where only you and the other person know the password, you can't be sure. However, how do you know that nobody is listening on your phone calls? How do you know that nobody is intercepting your letters/bills?
It takes more to intercept/read someone elses email than most other forms of communication, so don't worry so much. :)

If you know that the email address that is sending the email belongs to the person....unless there is a chance that someone else can access their email.
Here's a shot in the dark: Ask them if they wrote it.

i don't, actually. all i am sure is that i am who i am, that when i write an e mail, it is me who really writes it. but for the other end of the line - it is immaterial to me. as long as i am conversing with a human being, whoever he is, it doesn't affect me. it is not me he's fooling- it is himself.
