I'd probably try something holistic if you were working on health.... You could also become a botany teacher at a junior college.... I did meet a pharmacist that was interested in ethnobotany, but he made his money as a pharmacist.

Oo, you could work for an herb company, or with alternative medicines. Ethnobotany is fascinating, so I hope you find a job to suit your likes! I have no idea how much they would make. More if you worked for a pharmaceutical company.
