WHITE CHOCOLATE MOUSSE WITH BERRIES

Try this very light and refreshing dessert. It is so quick to prepare! Use a variety of berries alone or in combination. When fresh berries are not available, substitute frozen berries that have been thawed. This recipe is also a good choice for a diabetic menu.

1 small box (1 ounce) sugar-free instant white chocolate pudding
2 cups nonfat milk
2 cups nonfat whipped topping
2 cups fresh berries (or frozen, thawed) such as raspberries, blueberries, or huckleberries

In a medium bowl, mix pudding with milk. Stir constantly with a wire whisk for 2 minutes. Refrigerate for 5 minutes. Add whipped topping and mix well.

Layer mousse with berries in a serving bowl or individual parfait glasses. Be sure to save some berries for the top.

This is ready to eat or you can refrigerate it and serve later.

INGREDIENTS:
8 oz. unsweetened chocolate squares
1 cup smooth peanut butter (no sugar added)
3/4 - 1 cup erythritol
1 cup worth other sugar substitute (or to taste)
1/2 teaspoon vanilla
Pinch salt
PREPARATION:
1) Melt the chocolate. I like to pour boiling water over it, let it sit for 5-6 minutes, and then pour the water off. That way I know I won't burn the chocolate.

2) Mix the rest of the ingredients in, adjusting sweetener to taste.

3) Pack or spread into a loaf pan. Cool to room temperature, or you can put it in the refrigerator. Cut into 18 pieces and serve.

What ingredients are you working with?

Anything basically do you have splenda (can be bought in whole bags)

3 minute choclate mousse

1.) Get a large bowl, 1 packet of sugar-free jello choclate pudding, 1 sugar free cool whip packet, and fat-free milk

2.) empty 3 cups of fatfree milk and one packet of pudding

3.) add coolwhip and fold slowly or whip

EASY LEMON DESSERT

2 eggs, beaten
juice of 1 1/2 lemons
1 cup sugar
1 cup whipping cream
1/2 cup graham cracker crumbs

Combine ingredients and cook in a double boiler until thick. Allow to cool. Whip 1 cup cream. Fold into the lemon mixture.
Cover a shallow square glass pan with graham cracker crumbs, or alternatively, use a glass pie dish. Spread the lemon custard mixture on top.

Refrigerate until ready to serve. Cut into squares if a square pan was used, or wedges if served from a pie dish.

This recipe has been a Summertime favorite which has been in our family for over 60 years.

Variation: These can be served in custard cups for individual servings.

take some sugar free jello(strawberry) and take some lite fruit cocktail and make this. Its really very good. Or take the same kind of jello (lime) and put some bananas in it. It declious.

plain cold yogurt and mixed nuts ,no salt you can add fruit but that will add natural sugars.
