A half cup of string beans is roughly the amount you can grab in one hand. Keep in mind that you still have to trim the ends and take off the stems. It never hurts to have a little extra green vegetables in any recipe. Green beans will not impart too much liquid into a recipe when cooked and always adds extra color and texture to a cold dish.
