I'm not just looking for a one night stand, I want to have her in the roster of girls that I have sex regularly with.

Why do girls start acting bossy and think they have any rights just because you had sex with them?
Maybe you haven't been clear with that person, a girl migth act bossy because she is thinking that you two are starting some exclusive relationship, and she expects that kind of behavior from you.
Maybe you have to talk to the persons you HAVE SEX WITH, and tell what are your real intentions, don't lie to them saying things like .. i really care about you, or i believe you deserve someone special, those things make us believe and feel that you have a genuine interest in the person to have something more serious.
You have to say that you are not looking for that kind of relationship, but just to have sex, and that you are not willing to be exclusive.
Maybe you have to look for the kind of girls that are not looking for some serious relationship, but they are willing to HAVE YOU IN THE ROSTER OF GUYS that they have sex regularly with.!!!!!!
You are messing things... you just said:
"I want to have her in the roster of girls that I HAVE SEX regularly with".
And then you say:
"I also like having dinners, walking in the beach, watching movies"
Then you are sending those mixed signs to the person, have dinner, walk in the beach and watch movies sounds to me like a relationship, not a sex partner, as you say before.
Maybe you have to make up your mind first, and then decide what to do with her.

You screwed up the order of the relationship, you have to expect all of it to be screwed up. Next time don't have sex until you really want to be and stay one with her!
