and the recipe says to cover them with tinfoil, but I do not have any. Will they get dried out without it? (I have very little tomato sauce to put on top). Can I cover them with parchment paper instead of tinfoil to serve the same purpose?

The parchment most likely will not hold in the heat and moisture that tin foil would, but you could try it. You definitely need to cover them or they will dry out and become hard or possibly even burn.

Do you have any canned diced tomatoes? If so, put them on top (you could even blend them up and make more tomato sauce) to give the shells more moisture.

I highly doubt that parchment paper would work. The tinfoil is meant to make steam to cook the shells. Tinfoil keeps heat well and parchment paper isn't made for that. I would suggest getting tinfoil or borrowing some from your neighbor.

If not aluminum foil, you can alw ays use a glass lid made for that particular casserole dish, like a Pyrex dish. If I am putting foil on top of tomato sauce or other acid, I usually top the food w/ a sheet of parchment paper first. It's got the advantage of being non-stick, too.

when I ran out of foil, I have used an cookie sheet to place over the pan, just to keep theheat in the melt the chees mixture in the sheels, I have tried not covering it, but the shells itself dries out and the cheese mixture didnt melt like it should, it was thick and cakey inside. Just turn the heat down from 350 t 300-325 and bake about 15 minutes longer using a cookie sheet for a cover, It does work, becareful when you take the pan off the top so you don't burn yourself.

I 'd use another pan to cover them,parchment paper wouldn't work too well,and I would think the reason they said to put foil on is to not to dry out and cook too fast,hope this helps

I always cover my stuffed shells with the sauce then alot of Mozzerella cheese. Since you can bake with parchment paper, I would think it's OK.

Honestly foil over tomato sauce is not good! You can make them without the foil just watch them so they don't dry out. My suggestion is to make it saucy so they won't! every 15 to 25 minuets check them and add more sauce if you see them drying out. Stuffed shells aren't stuffed shells if they are not saucy! OK, you dont need to cover it with anything, all you have to do is spray them with a product like Pam or something like that or even rub the exposed pasta shell with oil. They dry out because they are exposed. If you use the sauce it will just dry out too. Use the spray, it works great.
