Does anyone have a recipe for a whole wheat muffin that requires honey,peppers,spinach,celery.

I have never heard of that mixture, but try this recipe, but mix in honey, chopped up peppers spinach and celery instead of apples and raisins and cinnamon, etc.

HIGH FIBRE CINNAMON MUFFINS
This recipe makes 12 muffins

This is a good way of increasing your fibre intake. You can add chopped apples, raisins, pears and peaches to the batter to add variety.

INGREDIENTS
1 and 1/2 cups oat bran
2 tablespoons canola or safflower oil
1/4 cup brown sugar
1 and 3/4 cup skim milk
1 teaspoon cinnamon
1 cup whole-wheat flour
1 teaspoon salt
2 teaspoons baking powder
2 egg whites
1 cup chopped fruit

Preheat oven to 180 C.

METHOD
Spray muffin tin with a non-stick spray or use a non-stick pan.
Combine oat bran, brown sugar, cinnamon, salt and baking powder.
Beat the egg and then add the oil and milk.
Combine milk mixture to oat bran mixture, gently mix until just moistened.
Fill in muffin cups and bake for about 20 minutes or until golden brown.

Nutrition information: per 1 muffin - 546 kilojoules- 1 carbohydrate exchange, 1 fat exchange

Spinach Muffins
Serves: 12

1-1/2 cups chopped onion [1-1/2 large]
1/2 cup chopped celery [2 large outer stalks]
1-1/2 cup grated carrots [2 large]
2 tablespoons green pepper
1 [10 ounce] package frozen chopped spinach, thawed and drained well
3 eggs, well beaten
salt, pepper, garlic, seasonings to taste
3/4 cup matzo meal

Sauté the onion and celery and carrots about 10-12 minutes. Add the pepper the last 5 minutes.

Toss in and cook the spinach for additional 5 minutes.

Add the eggs, seasonings and matzo meal; blend well. Bake in a greased muffin pan [12] or 9" round pan at 350°F for about 45 minutes.

Cool 10 minutes; remove from pan.

Vegetable Muffins
From: Micheline, Carignan, Quebec, Canada


1 1/2 cups [375 mL] boiled broccoli, finely chopped
1 1/2 cups [375 mL] cooked chopped ham
1 1/2 cups [340 g] grated Parmesan cheese
1 medium-size onion, chopped
6 eggs
1/2 cup [125 mL] vegetable oil
1 1/4 cups [175 g] all-purpose flour
1 tablespoon [15 mL] baking powder
Pinch oregano
Pinch minced parsley
Pinch thyme
Pinch garlic powder
Pinch salt
Into a large bowl, mix together chopped broccoli and ham, grated Parmesan cheese and chopped onion.
Into a clean bowl, beat eggs until foamy; then add oil.
Add flour and baking powder to egg mixture; beat until smooth.
Add broccoli mixture, oregano, minced parsley, thyme, garlic powder and salt to egg mixture.
Pour into greased muffins tins.
Bake into a preheated 375°F [190°C] oven for 12 to 15 minutes for small tins, 20 to 25 minutes for large tins.
