January 2005 we got a bottle of Sheridan's from a cruise to Mexico and have been very careful not to drink a lot of it since they don't sell it in the states. Just today I realized that it says to consume within 6 months of opening. Is that just something they are saying so we finish it quickly and buy more or can I get really sick from drinking it?

I also got a bottle of kahlua on the trip. I opened it 2 years ago as well. Since Kahlua doesn't have cream in it does it last longer?

Reason why I feel so strongly: Many years ago, there was an explosion downtown SF. It was lunchtime and some people had been served their lunch and were eating outdoors on the patio. The poisonous substance -- a carcinogen -- was airborne after the explosion but the diners hearing the explosion didn't really know what had happened and were uncertain whether to continue eating. Some people decided to eat the lunch that had been exposed. After reading about that incident, I always throw out stuff that is questionable. Better be safe than sorry later.

It probably can make u ill.Its got cream in it which does go off.Once uv opened a bottle it does go off quicker than when its sealed.U usually get longer than the use by date but 2yrs is a lot over.U'l probably b able 2 tell by the smell &/or if u want 2 risk it the taste.1 glass is unlikely 2 make u really sick if u want 2 try it 2 c if u get a bad stomach.If u do try it & its ok & u dont get a bad stomach u should drink it as soon as possible.I drink Irish Cream Liqueur which ive drank after the use by date but it does go off after a while when its open & i hav had 2 chuck it b4.I can usualy tell by its taste & smell.If in doubt chuck it.Is it worth the possible bad stomach.If u had it that long ur probly not that bothered about it anyway.

If it tastes ok I'd say drink it in small measures. I did actually have one opened for longer than two years and it was ok. I didn't get food poisoning from it.
I think quite often they put something like six months on the bottle, knowing that it will last much longer - but they are just covering their backs.
If it tastes 'funny' or 'off' then obviously don't drink it.

it will say that on the label for a good reason. even though it is alcohol, am guessing the rest of the ingredients would deteriorate over time. so don't drink it, throw it away. you can always get another bottle next time you visit mexico.

Seriously I would not drink that - you could make yourself very sick with the bacteria that is used to make liqueur.
