I love this recipe. You can you use cream of mushroom or chicken which ever you prefer. Fry or bake your chicken cutlets; place to the side in a deep dish pan. Heat the up 1 can of cream of mushroom in a sauce pan. Remember to add a little of milk to the sauce pan. Once the cream of mushroom is done; pour over chicken an some chopped scallions on top. Serve with some wild rice or a garden salad.
If no make chicken Parmesan.

Put them in the microwave with lemon pepper and put a wet paper towel over them for 2 1/2 to 3 min. and put cutlets over a rice pilaf and chicken gravy with stir fried veggies. Or have a Chicken Parmigiana with angel hair pasta and garlic bread.

Make sandwiches by using cold cutlets and ketchup on good french bread. Yummy!

I'd make some pasta with sauce and dice up the chicken and mix it in the sauce. Pour it over the pasta and serve immediately with a side salad, and some garlic bread

Make a salad. Add cheese & mushrooms & black olives & a boiled egg. Top it off with some ranch dressing. You could have a baked potato as well. Don't forget the beer you bikergal.

Slice the leftover breasts in 1/4 " strips ... make a nice Romain Caesar salad with croutons and red onion rings toss w/ Caesar dressing and top with the chicken slices finish w/ salt and pepper and sprinkle with fresh shredded parmagiono Reggiano cheese ... serve with a chilled Pinot Grigio and enjoy............

Add some rice and/or veggies (the microwave bags that steam them are GREAT! I especially like the asian medley for this, with added soy sauce...)
put it on a tortilla or sandwich wrap (i like that tomato "flat-out" wraps) roll it up, and broil it in the oven or toaster oven for about 3 minutes. Now you have a perfect, filling, chicken wrap! Yummmm...
