I was wondering about a loaf or muffins...preferably low cal?

Cranberry quick bread and a cranberry turkey sandwich with cream cheese and shreaded lettuce.

Quick Cranberry Nut Bread

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup butter or margarine, softened
1/2 cup granulated sugar
1 large egg
1 (16-ounce) can Ocean Spray® Whole Berry Cranberry Sauce
1 cup chopped walnuts

Preheat oven to 350ºF. Grease an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.
Combine flour, baking powder, cinnamon and nutmeg in a small mixing bowl; set aside.
Using an electric mixer, beat butter or margarine with sugar in a medium mixing bowl until light and fluffy. Add egg; mix well. Break up cranberry sauce with a fork and add to the butter mixture. Add nuts. Add dry ingredients to the cranberry mixture, mixing just until the dry ingredients are moist.
Spread batter evenly into prepared loaf pan. Bake until golden brown and a toothpick inserted into the center comes out clean, about 1 hour and 15 minutes. If bread begins to brown too quickly, loosely cover with foil and continue to bake until bread tests done.
Makes 1 loaf.

Quick Cranberry Muffins

INGREDIENTS:
3/4 cup whole cranberry sauce
2 cups biscuit mix
3/4 cup sugar
3/4 cup milk
1 egg
2 tablespoons melted butter

PREPARATION:
Combine biscuit mix, sugar, milk, egg, and butter. Mix until well blended. Break up cranberry sauce and fold into the batter. Fill greased and floured muffin cups about 2/3 full; bake at 400° for 20 to 25 minutes.

Makes about 12 muffins.

Cranberry Cream Cheese Pinwheels


Quick-and-easy prep makes these roll-up treats a great addition to any holiday party.
1 (8-ounce) package crescent roll dough (we used Pillsbury Crescent Rolls)
4 ounces cream cheese, softened
4 tablespoons jellied cranberry sauce


Step 1
First heat the oven to 375 degrees. Unroll the dough and divide it into 2 rectangles (most store-bought doughs are perforated down the middle). Press together any other perforations to seal them. Using a butter knife, spread the cream cheese evenly over the 2 rectangles, leaving a 1/4- to 1/2-inch border on all sides, then spread the cranberry sauce over the cream cheese. Starting at the short side, roll each piece of dough into a log, then cut each log into six 1-inch-wide slices.

Step 2
Place the slices on an ungreased cookie sheet and bake for 12 to 15 minutes or until golden brown. Let the pinwheels sit for 5 minutes (to allow the filling to set) before removing them to wire racks. Serve warm. Makes 12 pinwheels.

My personal favorite is to make a cranberry salad like this,

1 pkg (6 oz.) cherry flavored gelatin
2 cups hot water
1 lb. whole cranberry sauce
1 lb. can jellied cranberry sauce
1/4 cup lemon juice
8 ounces cream cheese
2 cups whipped cream or whipped topping
1/2 cup chopped walnuts or pecans
PREPARATION:
Disolve gelatin in water. Add cranberry sauces and lemon juice. Pour into a lightly oiled cake pan. Chill until firm. Blend together softened cream cheese, whipped cream and nuts. Spread on top of gelatin. Refrigerate overnight or for several hours before serving.

Here's a link with several recipies. You could sub any amount of fresh/frozen cranberries for the sauce. Then cut your sugar back a pinch (1/4 cup or so). To make any recipe low fat, take your favorite recipe and substitute 1/2 to all the oil for applesauce, yogurt, or any fruity baby food. It changes the texture a pinch, but still tastes and looks great. Enjoy!!

I had this difficulty at Thanksgiving and that i got here across this recipe and it replaced into very sturdy. slow - Cooked Turkey Sandwiches 6 C. cooked turkey 2 C. cubed velveeta a million can (10-3/4 oz.) condensed cream of chicken soup 1can (10-3/4 oz.) condensed cream of mushroom soup a million/2 C. finely chopped onion a million/2 C. chopped celery 22 wheat sandwhich buns, cut up **(any could be wonderful) In a 3qt. slow cooker, combine the 1st six factors. conceal and vook on low for 3-4 hours or till onion and celery are delicate and cheese is melted. Stir befor spooning onto buns. this could make 22 servings. i like to take this to kinfolk get togethers or holiday events that i pass to. Its consistently a huge hit.

Cranberry Cake

INGREDIENTS
1 (18.25 ounce) package white cake mix
3 egg whites
1/4 cup cranberry applesauce
1 (8 ounce) package cream cheese
1 (8 ounce) container frozen whipped topping, thawed
1/4 cup white sugar
1 (16 ounce) can whole cranberry sauce

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and lightly flour the bottom and sides of two 9 inch round cake pans.
In a large mixing bowl combine the cake mix, egg whites, water and cranberry apple sauce. Mix on low speed until batter is moist. Then mix on medium speed for 2 minutes. Pour batter into the prepared pans.
Bake cake at 350 degrees F (175 degrees C) for 30 to 35 minutes. Cake is done when a toothpick inserted near the center comes out clean. Cool cakes on wire racks in pans for 10 minutes. Remove cakes from pans and let finish cooling on racks.
To Make Frosting: In a medium sized bowl, beat the softened cream cheese, sugar and 1/2 of the whipped topping until smooth. Fold in the cranberry sauce and the remaining whipped topping. Refrigerate frosting until chilled. When cakes have cooled, frost the center and top of cake only. The frosting will be very soft.

Cranberry Swirl Coffee Cake

INGREDIENTS
1/2 cup butter
1 cup white sugar
2 eggs
1 teaspoon baking powder
1 teaspoon baking soda
2 cups all-purpose flour
1/2 teaspoon salt
1 cup sour cream
1 teaspoon almond extract
1 (8 ounce) can whole cranberry sauce

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C) grease and flour one 9 or 10 inch tube pan.
Cream the together the butter and the sugar until light. Add the eggs and stir well.
Combine the flour, baking powder, baking soda and salt. Add the flour mixture alternately with the sour cream or yogurt to the butter mixture. Stir in the almond extract and mix only until just combined. Pour 1/3 of the batter into the prepared pan. Swirl 1/2 of the cranberry sauce into the batter. Repeat, ending with the batter on top.
Bake at 350 degrees F (175 degrees C) for 55 minutes.

Cranberry Pumpkin Bread

INGREDIENTS
3 1/2 cups all-purpose flour
1 cup packed brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
3/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 cup egg substitute
1 (16 ounce) can whole cranberry sauce
1 (15 ounce) can pumpkin puree
1/3 cup vegetable oil
1 tablespoon orange zest
2 tablespoons chopped walnuts

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Spray two 8 1/2 x 4 1/2 inch loaf pans with non-stick cooking spray.
Combine the flour, brown sugar, baking soda, baking powder, salt, ground cinnamon and ground cloves in a large bowl and mix well.
Mix the egg substitute, cranberry sauce, pureed pumpkin, vegetable oil and grated orange zest together. Add this mixture to the flour mixture and stir until just moistened. Pour batter into the prepared pans. Sprinkle the top of each loaf with the chopped nuts.
Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes or until a toothpick inserted in the center comes out clean. Let loaves cool for 10 minutes then remove from pans. Can be made even lower in fat by substituting 1/3 cup applesauce for the 1/3 cup vegetable oil.
