This German potato salad is made with a bacon and egg dressing, and includes chopped green pepper and onion.
INGREDIENTS:
4 cups cubed peeled potato
4 slices bacon, diced
1/2 cup chopped onion
1/2 cup chopped green pepper
2 eggs, beaten
1/4 cup sugar
1/4 cup vinegar
1/4 teaspoon pepper
2 hard-cooked egg, sliced
PREPARATION:
Cook potatoes in a covered saucepan in an inch of boiling salted water until tender, about 20 minutes. Drain. In a large skillet, sauté bacon until almost crisp. Add onion and green pepper; cook 3 minutes longer. Combine beaten eggs with vinegar, sugar, and pepper; mix to blend well. Gradually add egg mixture to the bacon mixture, stirring and cooking until mixture thickens. Remove from heat and toss gently with potatoes. Spoon salad into a serving dish and garnish with sliced eggs.
Serves 6 to 8.

"A variation on potato salad - delicious!"

Original recipe yield:

INGREDIENTS
9 potatoes, peeled
6 slices bacon
3/4 cup chopped onions
2 tablespoons all-purpose flour
2 tablespoons white sugar
2 teaspoons salt
1/2 teaspoon celery seed
1/8 teaspoon ground black pepper
3/4 cup water
1/3 cup distilled white vinegar
DIRECTIONS
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool and slice thin.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside, reserving drippings.
Saute onions in bacon drippings until they are golden-brown.
In a small bowl, whisk together the flour, sugar, salt, celery seed, and pepper. Add to the sauteed onions and cook and stir until bubbly, then remove from heat. Stir in water and vinegar, then return to the stove and bring to a boil, stirring constantly. Boil and stir for one minute. Carefully stir bacon and sliced potatoes into the vinegar/water mixture, stirring gently until potatoes are heated through.

2 pounds small red potatoes (about 2 inches in diameter), washed well

5 slices bacon, cut crosswise into 1/4-inch strips (about 1/4 pound)

1 medium onion, chopped

1/2 teaspoon sugar

2 tablespoons cider vinegar

1/2 cup beef broth

1 1/2 tablespoons chopped fresh parsley leaves plus extra for garnish

In a large saucepan combine potatoes with salted water to cover by 1 inch and simmer until just tender, about 20 minutes.

While potatoes are cooking, in a medium heavy skillet cook bacon over moderate heat, stirring, until browned and crisp and transfer with a slotted spoon to paper towels to drain.

Drain potatoes and let stand until cool enough to handle. Cut potatoes into eighths and in a bowl combine with bacon. Keep mixture warm, covered.

Pour off all but 2 tablespoons fat from skillet and saute onion over moderately high heat, stirring, until softened, about 3 minutes. Add sugar, 1 tablespoon vinegar, and broth and simmer 2 minutes. Add onion mixture to warm potatoes with parsley and remaining 1 tablespoon vinegar, tossing gently, and season with salt and pepper.

Serve potato salad warm or at room temperature, garnished with parsley.

German Potato Salad


"This is a really good hot potato salad that my mother used to make for us. You can vary the amount of vinegar and sugar to change the taste around."





INGREDIENTS
4 potatoes

1/4 cup white wine vinegar
1/2 cup chopped green onions
salt and pepper to taste
DIRECTIONS
Bring a large pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, cool and chop.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Reserve bacon fat.
Add the flour, sugar, water and vinegar to skillet and cook in reserved bacon fat over medium heat until dressing is thick.
Add bacon, potatoes and green onions to skillet and stir until coated. Cook until heated and season with salt and pepper. Serve warm.

8 red potatoes, boiled and quartered, mixed with 3 hard boiled eggs (de shelled and coursely chopped), with about 4-5 crispy pieces of bacon, crumbled and some sweet relish. mix with hands, and season with salt and pepper. i never refrigerate this, i serve immediatly!

boil potatoes with skins on
rinse in cold water and peel off skins(they will rub right off)
cut and put in fridge to cool
fry bacon then cool and crumble
boil some eggs and slice them up
cut alittle onion and celery (if u like)
mix onion,bacon,celery,mayo, and vinegar with potaoes(mayo and vinegar to taste)
put sliced egg on top and salt and pepper to taste

I have a Better Homes and Gardens Cookbook that has alot of great recipes (& that one). Can find at your local Walmart. Thanks for the Q & to everyone that submitted their own recipe. I like trying different variations. :)
