If I am not mistaken,they are called pastry chefs,or professional bakers. I have seen some really beautiful bakery items at Walt Disney World and the cakes,cookies,and pastries are so beautiful and so meticulously done,you feel really guilty about eating it! Especially,considering how much time and effort the bakers put into the baked goods exclusively for the Walt Disney World theme parks!

Bakers or more formally pastry chefs.
Baking cakes, cookies and other pastries takes a bit of science. You can't substitute ingredients easily. Most of the top pastry chefs went to culinary school.

I have owned and operated a bakery for many years I have made about every type and kind of cake you could think of and I consider myself a professional baker.
you can go to a culinary school to be a pastry chef but to be a good professional baker you need a degree in chemistry.
