I have a recipe for deviled eggs that calls for grainy mustard. Can anybody explain this to me? Thank you

Grainy mustard is not mustard seeds from the spice section. It is a different type of mustard from the condiment section, and it may also be called stone ground mustard, country style, or other names. It is mustard that looks grainy, like there are pieces of mustard seed in it. However, I think that for deviled eggs you can get away with any kind of mustard, but it won't taste the same as stone ground mustard.

If you did not already know, mustard can come in several styles. Ranging from the yellow bottle of hines, to specialty mustards with added flavors and textures. To you, every day mustard, is a mix of mainly ground up mustard seeds, salt, and vinegar, and additives to preserve. Grainy mustard is one that still has the seeds is grain size pieces and can be even larger. These types tend to be spicy because mustard is by nature, known to have a "bite". And you would need to be prepared for the different texture... You would use grainy mustard if you wanted to have more of a Grey Pupon type taste, and if you just generally like the tast of mustard or it is required for your needs.

Grainy mustard is mustard seeds. You can find it in the spices section of any grocery store.
