Halal - anything that is allowed or lawful according to the Qur'an. It is often used in the context of food – especially meat – to indicate that the food has been prepared in accordance with Muslim principles and techniques.
Ingredients called enzymes are needed to make cheese. Three enzymes used to make cheese are pepsin, lipase and rennet. These enzymes can be from animal, vegetable or microbial sources. Animal sources include pigs and cattle. Pepsin is derived from pigs, and is Haram. Lipase derived from pigs or cattle are Haram. Lipase from cattle slaughtered according to Islamic requirements or lipase produced by micro-organisms is Halal. Rennet is derived from the stomach of calves. If the calf was slaughtered according to Islamic requirements, the rennet is Halal. Microbial enzymes are not derived from meat and are Halal. Cheese products manufactured with microbial/bacterial cultures are Halal. Most cheese products do not list the source of the enzyme. Call the food manufacturer to find out the source of the enzyme. In addition, it is possible that the source may change without notification.

Cheese is made up of milk with the splitting assisted by rennet. Rennet means nothing more that a small piece of the original cheese which was used to make the earlier one with. As such, there is no pork or alcohol in it. Rennet is merely the part of the original brew that was made with yeast, in some kinds of cheese, and other vegetarian additives in the case of others. Mostly, it's lime that was used to make rennet. But then, you can either take it or leave it. It's your choice. Cheese is almost vegetarian and is, therefore, in my opinion, halal. .

Oh my....
Go to the stores in the Moslem and Jewish neighbourhoods and ask the grocer. Ask the mullah or the rabbi.
If you see a little K with a circle around it, or a U with a circle around it, or a P with a with a triangle or circle --meaning pareve, a synonym for kosher or halal, that is an indication that it could be properly halal. But to make sure, ask around among the more experienced and knowledgeable of your faith community.
You could also check to see if the Union of Orthodox Rabbis have a list on their web site.
