When you eat something with mint in it and then drink water, why does your mouth feel even mintier?

I mean, seriously, have you ever noticed this? And why is that? <3

When you eat the mint, the essential oils are left on your tongue. The water mixes with the mint oils, and coats your mouth with a light layer of minty goodness. I love to drop a peppermint in my drinking water-makes me drink more!
