There are so many great foods in the world that, for me, are ruined by the addition of tomatos. It just seems like the whole world just can't eat anything without dumping tomatos on it! I like to watch cooking shows on TV but more times than not here come the tomatos!

Pesto is a great sauce. Cream of mushroom soup also goes well with spaghetti. See recipes below.

Creamy Pesto Shrimp. Leave out the shrimp if you dont like it.
* 1 pound pasta
* 1/2 cup butter
* 2 cups heavy cream
* 1/2 teaspoon ground black pepper
* 1 cup grated Parmesan cheese
* 1/3 cup pesto
* 1 pound large shrimp, peeled and deveined

1. Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
2. In a large skillet, melt the butter over medium heat. Stir in cream, and season with pepper. Cook 6 to 8 minutes, stirring constantly.
3. Stir Parmesan cheese into cream sauce, stirring until thoroughly mixed. Blend in the pesto, and cook for 3 to 5 minutes, until thickened.
4. Stir in the shrimp, and cook until they turn pink, about 5 minutes. Serve over the hot pasta.

Here's a really good and really easy pesto sauce. You might prefer this one over the creamy one above

Pesto Sauce
* 3 cups fresh basil leaves
* 1 1/2 cups chopped walnuts
* 4 cloves garlic, peeled
* 1/4 cup grated Parmesan cheese
* 1 cup olive oil
* salt and pepper to taste

1. Blend together basil leaves, nuts, garlic, and cheese. Pour in oil slowly while still mixing. Stir in salt and pepper.

Heres a recipe with the cream of mushroom sauce. Leave out the chicken or substitute it with pork, salmon, or even beef if you like.

* 1 (16 ounce) package spaghetti
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 3/4 pound processed cheese
* 1 (10 ounce) can diced tomatoes with green chile peppers
* 1 cup chopped green onion
* 4 skinless, boneless chicken breast halves - boiled, cut into bite size pieces

1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
2. Heat soup in a large saucepan over low heat. Add cheese and melt, stirring. When cheese is almost melted, stir in tomatoes with green chile peppers and green onion. Simmer over low heat for 2 to 3 minutes, stirring.
3. Add spaghetti and mix well, then stir in chicken. Heat through and serve.

Spaghetti with sauted broccoli, Saghetti with sauteed zuchini with garlic, Speghetti with clam sauce, Spaghetti with garlic and oil, Spaghetti with Anchovies and garlic, Spaghetti or Fettucine Alfredo. Spaghetti with Ricotta, Spaghetti with Butter and Parsley, Spaghetti with Basil, oil and garlic and italian cheese which is called Pesto . All these ingredients must be pulvarized in a food processor then poured over spaghetti. Spaghetti Carbonara. Is that enough? In most of these recipes just start with olive oil in a sauce pan or frying pan, add cut up veggie, and then the garlic and saute till tender. Serve over cooked spaghetti and top with parmesean cheese. You need not look at tomato sauce if you don't want to. Enjoy. All these recipes can be found on line in Italian Food websites.

Zuccinni, summer squash, Mexican squash - all add body without adding much to alter the "spaghetti" flavor. I've added broccoli and cauliflower in the past, but we are VERY tolerant of how the sauce looks. smaller chunks are better at first, or serve them steamed as a side. An unusual spice, clearly not traditional, is a teaspoon or so of cinnamon. We also use a bit of cumin in ours, but we are not tradition bound. I don't think I'd use the cumin and cinnamon the same evening, though. We love pasta with tomato sauces, and are more than happy to play with the theme. Good luck.

SPAGHETTI SALAD

2 pounds spaghetti
Red Wine Vinegar
McCormick's Salad Supreme spice
Italian salad dressing
Optional - diced cukes, diced Polish sausage.

Cook spaghetti noodles until slightly undercooked. Cool a bit. Add approximately 1/3 cup red wine vinegar and about 1/2 cup Italian dressing.

Season with Salad Supreme spice to taste (about 2 tablespoons). Mix often (liquids will settle).

Salad is best if you can let set covered in the refrigerator for a day or so.

Add extras IE: cukes, tomatoes, diced sausage, etc. before serving.

Sweetie of course there are!!!How about,cooking some broccoli up in a little extra virgin olive oil and garlic?Some lemon juice?Cook until broccoli is tender but still has a bite.Toss in spaghetti or your choice cut of pasta.Sprinkle with parmesan cheese.
This one is going to sound strange,but i actually tried it and it was good.Cook up your pasta,any cut.In another pan,cook up some brussle sprouts.When they are just tender,drain the liquid and toss them back in the hot pan with the burner off.Add one small can of Frito Lays Mild Cheddar Dip.Toss to coat,drain pasta and serve brussel sprouts over pasta.Yummm! it was really good,even tho it sounds not so appealing as im typing this.
Do a basic alfredo sauce.The jar of alfredo sauce is not as good as home made.In a pan melt two tablespoons of butter,add two tablespoons of flour and let it took until it forms a "paste" or just a few minutes until the raw flour taste cooks off.Add,some heavy cream or milk(i prefer cream it makes a richer sauce),parmesan cheese(a few hand fulls) and lots of fresh ground black pepper.Toss your pasta in,it doesnt have to be fettucini cut,it can be spaghetti or any cut you wish.Toss in some vegetables for a twist or the meat of your choice if you wish.Serve with bread and butter or garlic bread.

You can also use chicken broth, dried basil, parmesean cheese.... Heat water for pasta. Cube chicken, cook & set aside. Cook pasta eldente. Meanwhile, stir fry chopped carrots & brococoli. Add chicken broth, dried basil & parmesean cheese to the veggies. Return the chicken & simmer til heated thru. Serve over your pasta.

Greg, may I suggest that if you can choke down tomatoe sauce or tomatoes, do so! They are VERY good for you & it's been said that tomatoe products are good for prostate. My husband doesn't care for it either but knows that tomatoes have alot of health benefits. So eat up your widely versatile fruit/veggie! :))))!

12 oz. Ravioletti or tricolored tortellini
2 Tbsp. extra virgin olive oil
8 oz. Mushrooms - sliced
1/4 C. Walnuts - chopped
3/4 C. Heavy whipping cream
1/4 tsp. Black pepper
1/2 C. Fresh Parmesan - grated

Procedure
Heat olive oil in large skillet over medium heat. Saute mushrooms and walnuts until mushrooms are golden. Add cream and cook stirring frequently for 5 minutes until slightly thickened. Turn heat to warm and when cream stops simmering, add pepper and Parmesan and stir until sauce is smooth. Do not boil. Serve pasta with sauce.

Garlic and Herb Pasta

(This serves 2 really hungry people but can be spread out to 4 people if you serve it with a salad or something.)

24 cloves of garlic, peeled (This is a really boring job but it's so very worth it.)
2 TBSP olive oil
1 1/2 cup veggie broth or water
A couple of Roma tomatoes and a little onion, maybe some red pepper
~2 T dried basil
Tarragon, oregano, pepper to taste (the more the better, usually 2 tsp tarragon is perfect)
Whatever pasta floats your boat (I like penne or mostaciolli)

Sautee the garlic cloves (still whole) in the olive oil for 3 minutes, stirring frequently and being VERY careful not to burn them. If you do, throw em out and start over b/c burned garlic in this is REALLY gross. Add 1/2 c of the broth and turn the heat to low and let simmer for awhile, about 15 minutes or until the broth has evaporated mostly. [You should start the water for the pasta now.]
By this point, the garlic should be soft enough to crush with the back of a wooden spoon. Crush about 3/4 of them like this. Add the rest of the broth, the sliced up tomatoes, the chopped up onion, and the herbs.
I've actually never measured out the herbs I put in, so you should taste the broth and see how you like it. Wait a couple minutes for the tomatoes to shrivel up, add more pepper, and turn the heat off. Try not to drool into the broth. :)

Zest of 1 lemon
1/3 cup lemon juice
1/2 cup Extra Virgin Olive Oil
1-2 large garlic cloves minced
1/2 cup Kalamata Olives, pitted and sliced
2 tablespoons fresh chopped thyme or basil
Salt and freshly coarse ground black pepper
1 pound favorite pasta

You can used a lemon olive oil or add the lemon: Zest or grate the lemon and combine with the lemon juice, olive oil, garlic cloves, olives, thyme, and the salt, and pepper in a large serving bowl. Toss the hot cooked pasta with the sauce.

There are many ways to eat pasta without tomatoes.

You can do a Stroganoff, or Alfredo. Carbonara sauces are good.

There is a great shrimp stroganoff that I recently tried, it is made with chicken broth and sour cream.. if you don't like shrimp you can substitute with chicken.

There is also a great Greek pasta that doesn't even use sauce, it uses olive oil. Check out these recipes....

Try spaghetti with alfredo sauce, butter sauce,pesto, a sour cream and chives sauce, or a cheddar cheese sauce. You can also try olive oil with some garlic powder.

Try looking up a clam linguine sauce or look up a tomato with basil (real tomatoes, not just sauce).
