Actually, they still do it that way in third world countries. I've had the unfortunate privilege of seeing it done.
Europeans of old, as well as Americans, however, often used chamber pots, which were just large bowls kept underneath beds for the purpose of containing what you eliminated during the night. In the morning, these were frequently emptied by chucking the contents out the window--even in the cities, which made walking on the streets a dangerous proposition, particularly in the early morning hours.
These chamber pots are often sold at estate sales and antique shops these days, where people who have known nothing but indoor plumbing all their lives pick them up, thinking they're nothing more than large bowls. There was a story recently about a woman serving soup from one at Christmas dinner, where an elderly grandmother recognized it for what it was, and spoiled the meal for everyone.

Well depending on how long ago your speaking.
Back before what we call Modern Man, Humans went
wherever they were at the time. Using leaves or other available things to wipe themselves.
Then up until and sometimes still, People used outdoor outhouses. ( A building with a board with holes to sit on that was positioned over a deep hole in the ground) there was no water and these holes were buried when they became to full)
and of corse now we have toilets and indoor plumbing.

Well, at night, they went in a little pot called a chamber pot. They threw the contents out of the window into the street the next morning. Woe to anyone walking under the window. And castles had little protuberances in the walls with a little seat with a hole in it. They would go there. All of the stuff went straight to the ground. There are scientists studying their "leavings" on the side of the walls to see what they ate (boy, that's dedication). And of course, outhouses were quite popular. As were, and are, bushes.

A long time a go they did not had washrooms. So they use to go in the frame and jungles. Or some hid en places if they not had, hid en places then they just go in the open in places.

in lakes, rivers, bushes...in medival times they had toilets that either emptied into the lake that the peasants used, or it just stayed there and peasants had to clean it out
