Does anyone know a recipe for homemade cake icing?

If you're looking for a vegan version...I've got two...

For an Icing (which is not thick and creamy but runny and thin)

2 C powdered sugar
1 T water

Mix well. It may not sound like enough water, but it goes a long way with powdered sugar.

For a creamier "buttercream" frosting

1/2 c margarine (vegan)
4-5 c powdered sugar
1 t cream of tarter
2 T cold water
2 t vanilla extract

Place all the ingredients in a bowl and mix with a hand mixer on medium speed until desiered consistancy. You can also add orange, lemon, or other juices to give it more flavor.

Enjoy!

For a chocolate cake, try strawberry icing...
Strawberry Icing
1/2 cup butter
1 pound confectioners' sugar
1/4 cup mashed strawberries
beat the butter and confectioners' sugar together until smooth. Add strawberries. Spread between cake layers, then frost top and sides.

For Carrot cake try cream cheese icing...
One 8-once package cream cheese, softened
1/4 cup butter, melted
2 tbs vanilla
One 1-lb. box confectioner's sugar
1. With an electric mixer, beat the cream cheese until it is light and fluffy.
2. Gradually add the melted butter, beating until it is completely absorbed.
3. Add the vanilla and the sugar, beating well after each addition so that the icing is smooth.
Remove the cooled cake from the pan, then smooth the icing over the top and sides.

For vanilla, strawberry or chocolate cake, try buttercream...
3-1/2 cups sugar
13 large egg whites
3 pounds (12 sticks) unsalted butter, at room temperature, cut into half sticks
6 tablespoons clear vanilla extract
In a medium saucepan, combine the sugar and 3/4 cup water, mixing with a wooden spoon until the sugar is mostly dissolved. Place the pan on the stove, and use a clean pastry brush to paint the area just above the water line with water. Turn the burner on to medium and heat, watching the sugar mixture to be sure it does not carmelize or burn. Lay a candy thermometer in the pan and simmer the sugar-water mixture without stirring until the thermometer reaches 240 degrees F (soft-ball state); this will take about 5 to 7 minutes.

As the sugar nears the required temperature, place the egg whites in the large bowl of an electric mixer. Using the wire whisk attachment, beat the egg whites at medium speed until they turn from opaque to white and begin to hold soft peaks. They should be at least double in volume in about 3 to 5 minutes. Do not overbeat.

Turn the mixer on high and very carefully and slowly pour the hot sugar mixture in a very thin stream near the edge of the bowl and into the stiffly beaten egg whites. Beat for 20 to 35 minutes on medium to high speed. The egg whites will lose some of their volume and the mixture should resemble a very thick meringue. The outside of the bowl should be moderately warm to touch.

At this point, reduce the speed to medium or low and add the room temperature butter pieces, one at a time. The mixture will break and begin to look like cottage cheese, but don't worry. Keep the mixer running, continue adding butter, and let the mixer whip the buttercream until it begins to get smooth once again; this could take up to 10 minutes. Once the mixture is smooth, add the vanilla and beat for five minutes more. The buttercream is now ready to be colored or chilled. (If the buttercream is too soft, chill for 10 minutes and then whip again. If this doesn't work, cream 4 tablespoons of chilled butter, and then gently whip the creamed butter into the buttercream, 1 tablespoon at a time. Beat until the buttercream is smooth and there are no lumps.)

You don't say what kind or what flavor or for what type of cake. But you do say home made. I take that to mean a good old fashioned 'impress someone' icing. That would be a good old seven minute frosting. A little bit of trouble to make, but is very good. Much like divinity candy in flavor and texture. You'll need a double boiler (or a good stainless steel bowl over a pan of boiling water, an electric hand mixer and a spatula.

This recipe comes from the 1930 Good Housekeeping Cook Book that has been been in my family for 4 generations.

2 egg whites
1 1/2 cups sugar
1 Tablespoon light corn syrup
5 Tablespoons cold water
1/2 teaspoon vanilla extract

Combine unbeaten egg whites, sugar, corn syrup and water in top of double boiler. Beat constantly with egg beater over boiling water until icing is fluffy and holds its shape, about 7 minutes. Remove icing from hot water, and add vanilla. Mix well and spread on cake at once. This icing is desireable when the cake is to be served immediately and does not keep well. Makes enough to frost and fill one cake.

There are easier recipes to be sure. But this is one of those fluffy sticky wonderful snow white frostings that you don't see anymore. I still make it at Christmas to frost a white cake that I decorate with coconut and cherries.

Cake Icing

2-1/2 cups powder sugar
2 Tablespoons margarine
1 Teaspoons Vanilla

Add 1 tablespoon at a time of milk. Just enough to be able to stir other ingredients together.

Measurements do not have to be exact.
Spread over your favorite cake or cookies. ENJOY

Depends on what you want or type:
~Vanilla:~
2 cups powdered sugar
1/2 cup of butter
1 tablespoon milk

Add together and blend well with mixer
Place in the refridgerator until ready to put on cake.


~Chocolate Ganache Icing:~
Chop chocolate into small pieces, and place in a medium bowl.

Heat cream until bubbles begin to appear around the edges (scalding); pour over chocolate.

Let stand 5 minutes, then stir until smooth. Refrigerate until cold but not solid, stirring occasionally.

Whipped French Vanilla Buttercream Frosting

Enjoy this light and fluffy frosting on your favorite cake or try it on our French Vanilla Cake. Makes 16 (2-tablespoon) servings.Prep Time: 10 minutes

1 cup (2 sticks) butter, softened
2 teaspoons McCormick® French Vanilla Blend
1 box (16 ounces) confectioners' sugar, sifted
2 tablespoons milk

1. Beat butter in large bowl with electric mixer on medium speed until light and fluffy. Add French Vanilla Blend; mix well.

2. Gradually beat in confectioners' sugar, beating until well blended after each addition, frequently scraping sides and bottom of bowl.

3. Add milk; beat until light and fluffy. If frosting is too thick to spread, gradually beat in additional milk. Store in refrigerator up to 2 weeks. Rewhip before using.Easy French Vanilla Frosting: Stir 2 teaspoons of French Vanilla Blend into 1 container (16 ounces) prepared frosting.

Here's two different types:

MARSHMALLOW FROSTING
2 egg whites
1 1/2 cups sugar
1/4 teaspoon cream of tartar
1 tablespoon light corn syrup
1/3 cup water
3/4 cup marshmallow creme

In top of double boiler, combine egg whites, sugar, cream of tarter, corn syrup, and water.
Place over boiling water, beat till stiff peaks form; scraping bowl occasionally.
Remove from heat; add marshmallow cream.
Beat till spreading consistency.

FLUFFY 7 MINUTE FROSTING
1 1/2 cups sugar
1/4 cup water
2 egg whites
2 tablespoons light corn syrup
1/4 teaspoon salt
1 teaspoon vanilla

Combine sugar, water, egg whites, corn syrup, and salt in the top of a double boiler; blend.
Place over simmering water.
Using an electric mixer, beat the mixture constantly at high speed for 7 minutes or until the mixture triples in volume and holds firm peaks.
Remove from heat; beat in vanilla.
Spread on cooled 2 layer cake.

1 Box of Powdered Sugar ,1 Cube butter or margarine melted,mix together , If too thin add more sugar until desired thickness,And if you want it creamyer add milk to thin.Once the butter starts to set up again it will be frosting,you can also add food colors ,to get different toppings,LESS butter,add fruit pieces or candies (m m's).

OMG, I've been hoping for someone to ask this question.

1 cup sugar
3/4 cup Crisco (the solid stuff)

Mix them up with a spatula or spoon. Add food dye until you're satified with the color.

Note: You may have to double the amounts.

make life easy on yourself and buy whipping cream,,,,,just need a hand blender and add sugar to taste...add chocolate powder if you want chocolate..take you 5 minutes ..i'm sure youre tired after making the whole da** cake
