Besides putting all that unhealthy mayo and making a sandwich, what other healthier ways are there?

In my "Substituting Ingredients" book, it states that you can replace mayo with yogurt or sour cream, but I'm honestly not sure how that would go with tuna.

I do have a recipe (untried) for tuna burgers (you bake them in the bun wrapped in aluminum foil) but that recipe also calls for mayo.

Sorry I can't be more help. Maybe a lowfat mayo?

Well,

You could use a low fat mayo instead of regular mayo. Personally I don't like light mayo.

I don't really have a recipe because people's tastes very.

But, I use some mayo and add teriyaki sauce and some honey for balance to my tuna. This way I use less mayo and cut down on the fat content.

You could also use fat free cream cheese in place of some or all the the mayo. You would need to decide the amount of each item to use.

Tuna croquettes. I have been making them for years. This recipe can also be used with a large can of salmon too drained.

2 cans of Bumble Bee Tuna Albacore drained of liquid
1/2 Cup of Low Fat Mayo
You can substitute 1 egg white for the mayo if you want
Chopped Carrots, celery, onion, parsley, garlic, green pepper all in the food processor. Do not make it into mush
1 tsp of Hot Sauce
Pepper and Salt
1 tsp of Paprika
1/2 Cup of Seasoned breadcrumbs or Grated Dried Whole Wheat Bread if you want more fiber
Mix all together till it forms a pattie. Then roll on each side in corn meal.

Then either bake in a greased ban for 25 minutes on 350 degrees or fry in very little vegetable oil till golden brown on each side. I have made this recipe for years. It is great and very nutritious.

I like to make sandwiches, but not with mayo. Drain the tuna and put it into a bowl, add s&p lemon juice and a tiny bit of Miracle whip (about 1 teaspoon). Put it on bread with some freshly slice avocado and enjoy.

Cook pasta. Fry chopped onions, mushrooms & peppers in a very little bit of oil. Mix up small amount of a white or cheese sauce. Stir in the onion mix plus the tuna. Stir all that into the pasta. Serve with salad.

Yummy!

Try using Albacore tuna with Ranch Dressing. It is so good make it just like you use mayo. It is always a big hit whenever i make it. Or make tuna salad and stuff tomatoes with it that is really good too.

My sister bought me a great book called "Take a Tin of Tuna" by Joie Warner. Chronicle Books. A whole cookbook of canned tuna recipes, most very healty.

I don't know how easy it is to find. It may have been one of those books in the bargain rack in Border's.

Tuna Noodle Casserole from Scratch

"No canned soup mix in this recipe! Mushrooms, onions, celery, and peas all go into this comfort casserole."

Original recipe yield:
6 servings

PREP TIME 30 Min
COOK TIME 45 Min
READY IN 1 Hr 15 Min


INGREDIENTS
1/2 cup butter, divided
1 (8 ounce) package uncooked medium egg noodles
1/2 medium onion, finely chopped
1 stalk celery, finely chopped
1 clove garlic, minced
8 ounces button mushrooms, sliced
1/4 cup all-purpose flour
2 cups milk
salt and pepper to taste
2 (6 ounce) cans tuna, drained and flaked
1 cup frozen peas, thawed
3 tablespoons bread crumbs
2 tablespoons butter, melted
1 cup shredded Cheddar cheese
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Butter a medium baking dish with 1 tablespoon butter.
Bring a large pot of lightly salted water to a boil. Add egg noodles, cook for 8 to 10 minutes, until al dente, and drain.
Melt 1 tablespoon butter in a skillet over medium-low heat. Stir in the onion, celery, and garlic, and cook 5 minutes, until tender. Increase heat to medium-high, and mix in mushrooms. Continue to cook and stir 5 minutes, or until most of the liquid has evaporated.
Melt 4 tablespoons butter in a medium saucepan, and whisk in flour until smooth. Gradually whisk in milk, and continue cooking 5 minutes, until sauce is smooth and slightly thickened. Season with salt and pepper. Stir in tuna, peas, mushroom mixture, and cooked noodles. Transfer to the baking dish. Melt remaining 2 tablespoons butter in a small bowl, mix with bread crumbs, and sprinkle over the casserole. Top with cheese.
Bake 25 minutes in the preheated oven, or until bubbly and lightly browned.

I like to make easy cheesy tuna "casserole." Simply heat some milk and cheese, and mix with tuna and macaroni (or your favorite pasta).

Surprisingly, or not, eating straight out of the can is quite good!

You could tumble it into cooked penne with sliced grape tomatoes, kalamata olives and a light drizzle of extra virgin olive oil and a few grinds of black pepper.
