I have Crohn's Disease, Pancreatitis, and i am lactose intolerant.
I can't have fats, because of the pancreatitis and i can't have milk products, obviously.
Are there any good desserts besides popsicles that would be good for me?

1 1/2 cups unbleached flour
2 teaspoons baking powder
1/3 teaspoon salt
1/2 cup turbinado sugar
1/2 cup soy milk
1 tablespoon pure maple syrup
1 teaspoon fresh lemon juice
1 lemon, zest of
1/4 cup vegetable oil
1 1/2 teaspoons Ener-G Egg Substitute, mixed with
2 tablespoons warm water

Preheat oven to 350 degrees.
Combine first three ingredients in a large bowl.
Combine the remaining ingredients in a medium bowl.
Add the wet ingredients to the large bowl and gently stir (do not overmix!).
Pour into lightly oiled mini-loaf tin (filling 6 mini-loaves) and bake for 25-30 minutes.

I'm sorry to hear you have so much trouble! Try this, and good luck! DIp the bottom of these Meringues in fruit preserves, then coconut.

2 egg whites
1/8 teaspoon cream of tartar
3/4 cup confectioners' sugar
1/4 cup shredded coconut
1/4 teaspoon almond extract
DIRECTIONS
Preheat oven to 250 degrees F (120 degrees C).
In small bowl with mixer at high speed, beat egg whites and cream of tartar until soft peaks form. Beating at high speed, gradually sprinkle in sugar, 2 Tablespoons at a time, beating until sugar is completely dissolved. (Whites should stand in stiff glossy peaks.) With rubber spatula, fold in coconut and extract until mixed.
Drop mixture by rounded teaspoonfuls onto large cookie sheet, about 1 inch apart.
Bake 1 hour or until dry

Fruit is lovely and you can jazz it up a bit to:

Caramelised pineapple rings

Fresh is best. Dust with icing sugar and stick under a grill or into a dry, non-stick pan


Fruit kebabs

Skewer some fruits and stick it under the grill or on the BBQ (use hard fruits that don't collapse under heat like pineapple, apples, banana, etc.

Meringues are sugar and egg whites (no fat in the whites). Nice with fruit salad.

combine 2 packs of any jello flavor n add fruit cocktail n tropical fruit n let sit in refrigerater all night.drain the juice out of the can before pouring it into jello mix

peach crisp
1c.flour 3c.fresh peaches
1c.sugar 1/2tsp.cinnamon
1stick butter or margarine
dash of salt

mix flour n sugar;stir in meltd butter.in a 1-3/4qt.baking dish,a layer of peaches n a layer of flour mixture until all mixture is used up,with top layer being the mixture..bake 1 hour at 350 degrees.

Angel food cake is the best one. No milk, no fats!!! You can find numerous recipes for it just type in angle food cake recipes.com

grilled peaches is really good! just pop them on the grill for a few minutes on each side and they get soft and tasty
