All you are doing is incorporating air into the chocolate milk making it seem thicker and creamier, which naturally makes appear to taste better.

Because cows don't produce chocolate milk naturally, chocolate powder is an additive to the milk, and usually settles to the bottom of the jug.

Shaking it, like with all other drinks (like juice, etc), mixes the milk and powder back together evenly, and makes it taste better.
