This thursday is my birthday and I've just started a new job where the tradition is that on your birthday you bring cake for the whole office. I'm hoping to impress my colleagues with my fine selection of home baked cakes but my family has never been one for chocolate cake making so I'm in need of a tried and tested recipe that won't let me down, preferably something gooey and rich that the guys will fall for as I think I have every other type of cake eater covered!

Lena's Chocolate Cake

Ingredients

2 c. Sugar
1 c. Butter
2 Eggs
1 tsp Baking Soda
1 c. Buttermilk or Sour Milk (1 tsp lemon juice added)
1 tsp Salt
1/2 c. Cocoa
1 tsp. Vanilla
2-1/2 c. Flour
1 c. Boiling Water ( be sure it is boiling)


Instructions

Mix all ingredients except water.
Slowly add the water and mix carefully.
Pour into 9 x 13 greased cake pan.
Bake at 350° F until a toothpick or butterknife comes out clean when inserted in the middle (about 30-40 min.)

This is a very thin batter.
Cake is dense and very moist.

I was at a friend's house the other day. She really needed some chocolate (not that I couldn't do with some myself), so we looked in her pantry. All we found was the cake mix, canned frosting and Hershey's cocoa. We finally scrounged-up some powdered sugar in there, too. The cake recipe is a variation of a recipe from the The Sweet Potato Queens' Big-A-- Cookbook. I got the frosting recipe right off of the HERSHEY'S COCOA canister.
Warning: This cake is extremely chocolatey and you might want to serve it with whipped or ice cream to cut the flavor. Or not...

1 devil's food cake mix
4 eggs
3/4 cup oil
1 cup milk
-----
1 can whipped vanilla frosting
-----
1/2 cup butter or margarine
2/3 cup HERSHEY'S Cocoa
1 teaspoon salt
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla

Preheat the oven to 350 degrees or 325 degrees for a glass or dark metal pan.


Grease a 9 x 13 pan.
Mix the first set of ingredients with a hand mixer for about 30 seconds on low. Increase the speed to medium and mix for 2 minutes. Hand stir in canned frosting. Bake for 45 minutes to an hour.

Before cake is done, melt the butter in a medium saucepan. Stir in cocoa and salt. Add powdered sugar alternately with milk. With hand mixer, mix until spreading consistency is reached. Stir in vanilla.

Spread frosting on warm cake.

Serve cool (if possible).

Chocolate Mayonnaise Cake

The Ultimate

Ingredients:
2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1-1/4 tsp. baking soda
1/4 tsp. baking powder
3 eggs
1-2/3 cups sugar
1 tsp. vanilla extract
1 cup Hellmann's ® or Best Foods ® Real Mayonnaise
1-1/3 cups water
Instructions:

1. Preheat oven to 350°. Grease and lightly flour two 9-inch round cake pans*; set aside.

2. In medium bowl, combine flour, cocoa, baking soda and baking powder; set aside.

3. In large bowl, with electric mixer at high speed, beat eggs, sugar and vanilla for 3 minutes or until light and fluffy. Beat in Hellmann's ® or Best Foods ® Real Mayonnaise at low speed until blended. Alternately beat in flour mixture with water, beginning and ending with flour mixture. Pour into prepared pans.

4. Bake 30 minutes or until toothpick inserted in centers comes out clean. On wire racks, cool 10 minutes; remove from pans and cool completely. Frost, if desired, or sprinkle with confectioners sugar.


*Or, prepare cake mix as above in 13 x 9-inch baking pan and bake 40 minutes or until toothpick inserted in center comes out clean.

Molten Chocolate Mini Cakes

Known also as "lava cakes," molten cakes are the answer to the most decadent chocolate craving. Here's an easy version using cake mix.
Prep Time:30 min
Start to Finish:2 hr
Makes:18 mini cakes


1/2 cup whipping cream
1 cup semisweet chocolate chips
1 box Betty Crocker® SuperMoist® devil's food cake mix
1 cup water
1/3 cup vegetable oil
3 eggs
1 container Betty Crocker® Rich & Creamy chocolate frosting
Powdered sugar
Sliced strawberries


1. In 1-quart saucepan, heat whipping cream over medium-high heat until hot but not boiling. Stir in chocolate chips until melted and mixture is smooth. Refrigerate about 1 hour, stirring occasionally, until thick.
2. Heat oven to 350°F (325°F for dark or nonstick pans). Grease and flour or spray with baking spray with flour 18 (2 3/4x1 1/4-inch) muffin cups. In large bowl, beat cake mix, water, oil and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl constantly. Place 1/4 cup batter in each muffin cup. Spoon 1 tablespoon cold chocolate mixture on top of batter in center of each cup.
3. Bake 18 to 22 minutes or until top springs back when lightly touched. Cool 1 minute. Carefully remove from pan; place on parchment paper. Cool 10 minutes. Frost with chocolate frosting. Just before serving, dust with powdered sugar. Garnish with strawberry slices. Serve warm.
High Altitude (3500-6500 ft): Heat oven to 400°F. Increase water to 1 1/4 cups, decrease oil to 1/4 cup and add 2 tablespoons all-purpose flour to dry cake mix. Use paper baking cups in muffin cups. Bake 15 to 18 minutes. Makes 24 mini cakes.

This recipe is over the top, especially with a few adjustments. If you Really love chocolate, use bittersweet chips (either 3/4 cup plus 1/4 cup semisweet OR all bittersweet). I used 1 egg along with 1/2 cup egg substitute for the 3 eggs and left off the frosting on top. (Make sure your filling doesn't touch the sides of the muffin cup...make sure it stays in the center.) WOW! Is this heaven or what?

I have made this cake several times and everyone raves about it. I am hardly the baker but it comes out perfect every time.
