Mine is Hi....but try this out; if you're the first to greet someone, they will very often use the same word you did. This happens most with people you aren't very close with.!

You are right. I have noticed that before. So I try to always say something off the wall when I run into someone that is only a casual acquaintance. Like "What do you think about putting grass in the living room instead of carpet?" So far no one has repeated anything back to me. And the ones who actually stick around are the ones I end up liking best anyway. We have more fun.
Now if it is someone I know I do just say either Hey or Hi.

I greet them with their name. And a smile, usually. If I do not know them, or if it is a group, I usually say "Good ( Morning, after noon, evening,) whatever is appropriate.

Mine is either "'ello" or or a version of "hi" where I kind of mix an "oi" sound with the "i" sound.
People usually respond with the more conventional american version of what I say. "Hello" in response to my "'ello" and "hi" or "hey" in response to my "hoi".

I say whatever comes to my mind at the time. Sometimes hola, sometimes Helloooooo, etc. It is fun to experiment.
