You can't always tell. Sometimes you have to engage in subtle conversation.

Subtle questions and observations, and leading questions. Ask what they did at the weekend, or last night - they might say they went to a church, mosque, whatever. That gives an open door to ask a bit more.
Of course, using that method with an athiest won't help much, but the general idea works.

That is a very good question!
We meet people in their homes all the time who think they know our religion better than we do!
They take the word of someone who's opinion is not based on fact over that of a believer!
We are told (for example) that we don't believe in Jesus. (Our King) and all sorts of rubbish not of our faith.
They even insult us to others asking honest questions.........

Well, some of them have tells, like Crosses, Stars of David, VEILS, PURPLE TURBINS, FISHES on the back bumper of their cars!
