Sometimes when I leave grapes in the fridge too long, they go bad and I have to throw them away. Other times they dry up and become sweeter and better to eat. I guess that's the beginning of the process that turns grapes into raisins, but how do you make it happen in your fridge?
Thanks.

it has to do with the enzymes breaking down and releasing gasses. I dry them in my food dehydrator to where they are still plump, but dry and sweet. I would think you could accomplish the same thing in a low oven-would be worth trying a few

I do not think that you can really tell by putting them in the fridge for a long time. It's a toss up really as to whether some come out sweeter than others.

I use screens and place the grapes between the screen and allow them to air dry in the sun for a day or so. To long will make raisins.

hmm that is hard because grapes take time they can get saugy and bad but leave them out of the frige for 2 days and see if they get sweeter

You have to leave them more time outside the fridge and they will get sweeter...then move them to a cool place, but in a plastic container, or a ziploc with holes so they can breath...metal will ruined them

Don't refrigerate grapes. They will ripen naturally and be sweeter. Don't buy more than you can eat in a couple days or they will go bad.

We love grapes and when they might start to go bad....When we bought too many. I will put them in a freezer bag and seal tight...They freeze and last longer. They stop aging and when you eat them from the freezer they are delicious. Refreshing and really yummy. But DO NOT thaw them and re-freeze....They then get squishy.
