In a little pub I used to work in I would cut the potatoes into fries and immediately put them into salted ice water, plenty to cover them all, let sit for 15-20 min. Rinse under cold water,repeat 3XS... then pat dry and fry in either vegetable oil or for a nice change some olive oil. Make sure you keep them in the cold water until your ready to cook them or you will have some very funky black fries.I believe the idea to soaking them so much is to remove as much starch out of them as possible...try adding some different kinds of salts to your fries at the end of cooking get creative the choices are endless ..Happy fries to you!!!Also make sure your oil is plenty hot enough test 1or 2 and drain them well on paper towels...

8 Idaho potatoes, peeled
1/2 gallon peanut oil, neutral flavor, for frying
Salt to taste

Cut the french fries with mandoline or french fry cutter 1/4-inch strips. Heat a saucepan or stock pot (at least 2 gallon capacity) with the oil about 250 degrees (use a thermometer to gauge). Add the french fries and cook, stirring to avoid clumping together, about 3 minutes, until soft but not mushy. Remove with a mesh strainer and drain onto paper towels. Turn heat to high and heat oil to 350 degrees. At the last minute before serving plunge the fries into the oil and cook until golden brown. Remove from oil, drain onto towels and season with salt to taste.

I would say that the best way to cook french fries is to deep fry them. However if your looking for a healthier alternative to deep frying, you can cook french fries in the oven. Less grease and less fat.

I have heard that a great way to cook chips (or French fries as Americans like to call them) is to cut them into somewhat thicker pieces and boil them for 5-10 (depending how thick) minutes or so in boiling water first. They need to remain firm but slightly soft on the outside. You drain them and pat them over to dry. You then fry them in very hot oil until crispy. The chips look very crispy on the outside but taste fluffy on the inside.

If you're using fresh potatoes cut them into appropriate sized pieces. Blanch them in in 350 degree vegetable/neutral oil for about 1 minute. Take out of oil and drain on paper towel. Put in refrigerator to cool. When ready to serve just pop fries back in 350 oil till golden brown. Can't remember why but keeping fries cool is supposed to make them crispier.

take a potatoe cut it into large chips by first cutting into slices then length ways put oil into a large pan put it on a med high heat and drop a small piece of bread into it when it starts to sizzle immerse your ff then turn dow the heat after 5 miniuts take out of the pann and turn up the heat after another min place the ff in the pan again and fry until golden brown this is the way we have them in the north of england the chunkier the better also not at fattening as the thin mcdonalds sort

Cook your French Fries in Wesson Oil at medium heat. Don;t overload your pot or it takes longer and burns the Fries instead of making them crispy.

When they float to the top of your oil...their done.

i have found the best way to cook french fries is to lightly grease a broiling pan with pam cooking spray and lay the french fries in single layer and bake them in oven until golden crispy, using a broiling pan allows any grease to drip in pan and so the fries do not sit in the grease and also they turn out crispier.

CHIPS.....are best deep fried in a CHIP pan.

start with a slow heat then gradually increase heat.....keep going until the CHIPS are a nice golden brown colour.
serve with sausages and beans, brown or red sauce, salt and vinegar.

if you don't have a deep fryer.

you can use saute pan and with oil.

rule of the thumb. let saute pan heat up first before put French Fries
