Mark was the first gospel written. Matthew and Luke were based on Marks writings. Some scholars believe Mark was a child when he witnessed Jesus' arrest. (he was the little boy who ran away.) If so, Mark began writing the Gospel when he got older.
It is possible that people did write down Jesus' "super deeds" as he did them and that they just didn't make it into our Bible. Have you ever heard of the apocrypha?
Also you are wrong when you say that no non-christians wrote anything about Him. There are contemporaneous references to the existence of Jesus, in I think Roman writings. Plus you assume that everything that was written 2000 years ago has survived to the present day. There's a lot of records we havent found that may be lost forever.
Plus you assume that writing was as prevalent back then as it is today. Very few people could write, and the idea that anyone who wanted to write something could do so easily is just not so. People just didn't have paper and pen lying around the house. There were people who's job it was to write stuff down, but for the vast majority of humans on the planet, they did without reading or writing. They mostly relied on oral storytelling, or having someone else read stuff to them.

When my children were young I always wanted to make sure I got pictures and movies of everything that was going on. That is nice BUT I learned that I miss a whole lot of things going on that way. With my grandchildren I enjoy them at the moment and don't bother with the pictures.
I wonder if was because what was going on in Jesus time was so amazing that people didn't have the words to describe it. Words on paper will pass away. Jesus wants to write His Word on our hearts for eternity.

Those who wrote the gospels were eye witnesses to the life and death of Christ. The important thing is they did write it down as inspired by the Holy Spirit. You know those Apostles would recall much better the events of Christ's life and death better then people could today. Their heads were not full of baloney like yours. They did not spend their life watching "Lost", or "Survivor", They spent their lives going around starting Churches and preaching the gospel.
