Eggplant Parm is all I can think of...what else?

I made this recipe a few weeks ago, and it was DELICIOUS, and surprisingly simple!

Peel and slice your eggplant.
Salt them and place in a colander for an hour (this makes them tender).
Peel and chop 8 shallots (or 3 red onions) and 3 garlic cloves.
Slice 3 tomatoes in 1/2 inch slices
Rinse the salt from the eggplant, and sautee in olive oil until golden brown.
In the same fry pan, sautee the shallots, sliced mushrooms, and garlic in butter and 1/4 cup of wine.

Layer the eggplant in a casserole dish (I used 13x9).
Top with tomatoes.
Top with the mushroom sauce
(Optional) Top with butter toasted bread crumbs
Bake at 350 for 30 minutes.

Eggplant Rollatini

8 oz ricotta cheese
1/2 oz prosciutto (diced very small) *optional
2 oz grated parmesan
3 oz shredded mozzarella
1 pinch nutmeg (to taste)
1 pinch white pepper (to taste)
3 medium round eggplant

Mix all ingredients (except the eggplant) in a food processor with paddle until they are incorporated. Use spoon in bowl if you don't have a food processor.

Slice eggplant lengthwise (approximately 1/2 inch thick). Brush lightly with olive oil and grill with salt and pepper. Let cool. Place approximately 1 oz. of filling on each slice and roll lengthwise. Top with marinara sauce. Serves approximately 6 to 8.

Serve with a leafy green salad.

Try Moussaka. It's a Greek dish of layered eggplant and ground beef or lamb. Very tasty, too.

In this lasagna recipe you use eggplant instead of noodles.

EGGPLANT LASAGNA
Mock Noodles
-------------------------------------------
2 large eggplant, peeled,sliced lengthwise into ¼ inch noodle-like strips cooking spray (olive oil spray is best)
salt and pepper

Meat Sauce
---------------------------------------------
1 1/2 lbs ground sirloin or turkey breast or Italian sausage
2 tablespoons olive oil
2 onions, chopped
3 cloves chopped garlic
1 red pepper, chopped
1 package sliced mushrooms
2 tablespoons italian seasoning (or mix of oregano, basil and thyme)
1 teaspoon fennel seeds (optional)
salt and pepper
1 teaspoon red pepper flakes (if you dare!) (optional)
1 (10 ounce) package frozen chopped spinach
1 cup red wine or vodka (optional)
1 (28 ounce) can tomato sauce (or large jar sugar free sauce if you can find it)
1 (15 ounce) can diced tomatoes (for less sugar, 3 chopped roma tomatoes)

Cheese Mixture
------------------------------------------
2 cups low-fat ricotta cheese
2 eggs
3 green onions, chopped
3 cups shredded lowfat mozzarella cheese
1/2 cup parmesan cheese
Cheese Mixture
2 cups low-fat ricotta cheese

1/2 cup parmesan cheese

Preheat oven to 425 degrees.
Spray cookie sheet, arrange eggplant slices and season with salt and pepper.
Cook slices 5 minutes on each side.
Lower oven temp to 375.
Brown meat, onion and garlic in olive oil for 5 minutes.
Add red pepper and mushrooms, and cook 5 minutes.
Add spinach, tomatoes, spices and wine and simmer for 5-10 minutes.
Blend ricotta, egg and onion mixture.
Spread 1/3 of meat sauce in bottom of 9” x 13” glass pan.
Layer ½ eggplant slices, ½ ricotta, 1/3 mozzarella and parmesan.
Repeat.
Add last layer of sauce, then mozzarella and parmesan on top.
Cover with foil and bake at 375 degrees for 1 hour.
Remove foil and bake or broil another 5-10 minutes until cheese is browned.
Let it rest 10 minutes before slicing, if you can wait that long!

I tried this recipe posted by Patticake on recipezaar and found it very good. I've made it several times for pot luck. It's a winner.

Eggplant with spaghetti squash.....using a tomato or sauce or sprinkle some olive oil, salt and pepper ,parmesan cheese, fresh parsley and some minced garlic.
