Or do you think there's a limited correlation?

What I'm wondering is if by merely going through hymnals of different churches, you can get an accurate idea of their teachings.

I would think so. In my case (the Church of Jesus Christ of Latter-day Saints) it would be a good idea to look at the Primary songbook for children first, and then move on to the hymns, since I think the children's songs do the best job of explaining more doctrine than the hymns, even. When you are strictly speaking about the Atonement of Jesus Christ, however, I suspect the hymns themselves - especially for sacrament meeting - do an better job. I love all of them!

With hymns, you can get a sense of it but they are not a creed or statement of belief.
As far as the What's Happening Now churches, their songs are so fluffy and superficial that if your premise is true: they believe in nothing, so it seems.
