I am looking for ways to jazz up my lunch, since I'm getting very tired of ham and cheese or cheese and veggie sandwiches.
What is your favorite, portable sandwich (or wrap, or stuffed pita)?

~~~Whole wheat wrap with avacado spread on top,,,,then for some crunch try brocholiee slaw ,,,then add a layer of thinly sliced turkey,,,,some alfalfa sprouts,,,some swiss cheese,,,,and sprinkel a few walnuts,,,,,,yummy,,,,tastey,,,crunchy,,,,

Now my favorite sweet sandwich would be fluff n nutter! Some soft white bread,,,,spread with marshmellow fluff and peanut butter,,,cold glass of milk on the side,,,,,that will cure a sweet tooth!!!

Sweetie,i love a kicked up grilled cheese.
What you will need:
Two slices(per sandwich) of french bread
tomato(preferrably fresh from the garden is best)
Mozzarella,and parmesan cheese (Mozzarella sliced and parmesan grated or sliced)
Salt and pepper
butter
Herbs of your choice,i like basil in this.

Heat a griddle pan or skillet medium -medium low.Next,butter one side of each slice.Next,place one slice of mozzarella on your bread.Then your next layer will be your parmesan cheese.Then add the tomato,You will want thin slices.Salt and pepper to your taste,then top off with your basil,or any herbs you have on hand really.Top with your other piece of bread and place in your skillet or griddle until golden.Toss over and brown the other side.Yum!

Another simple idea,is to look through your fridge.See if you have any leftovers you need to use before they go bad.Toss them in a pita or tortilla.Mix and match flavors and you could actually find a sandwich you like.You control the ingredients in this dish and you know it is good as you made what has went into it.

Baked Eggplant Sandwiches
2 tablespoons olive oil, divided
2 cups bread crumbs
2 teaspoons salt
1/2 teaspoon ground black pepper
1 cup all-purpose flour
1 egg (Or egg replacement equivilant to)
1/4 cup water
1 large long eggplant, cut crosswise into 1/3 inch thick slices
1/2 cup finely chopped onion
3 cloves garlic, minced
5 ounces fresh goat cheese(You dont have to use goat cheese,you can use your own favorite if you do not enjoy goat cheese)
1 cup shredded sharp provolone cheese
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh basil leaves
ground black pepper to taste

Preheat the oven to 450 degrees F (230 degrees C). Coat two large baking sheets with olive oil.
In a medium bowl, stir together the crumbs, salt and 1/2 teaspoon pepper. In another bowl, whisk together the egg and water. Place the flour in a third bowl. Coat each slice of eggplant with flour, shaking off the excess, then dip into the egg, and finally coat with crumbs. Place on the oiled baking sheets.
Bake for 12 minutes in the preheated oven, then turn over the slices and bake for an additional 12 minutes, or until golden brown. Remove from the oven and cool slightly, but leave the oven on.
While the eggplant is baking, heat 1 tablespoon of oil in a skillet over medium heat. Add the onion; cook and stir until almost tender, then add the garlic. Cook for just about 1 minute. Remove from the heat and stir in the goat cheese, provolone cheese, parsley and basil. Season with pepper.
Divide the cheese mixture among 8 slices of the eggplant (half). Spread to cover, then top with remaining eggplant slices, pressing to compact. Return to the baking sheets.
Bake in the preheated oven until eggplant is crisp, about 15 minutes. Place two sandwiches onto each serving plate.

How about corned beef and Swiss on rye with a little mayo and some good mustard? I also like liverwurst or liver sausage on rye with mayo and mustard, but I don't know anyone else who does.

But my favorites are my own chicken, tuna or egg salad with bibb or Boston lettuce, tomato slices and mayo on Italian or some other sturdy white bread. But those are not really portable for work, unless you want to carry all the ingredients separately.

If you have access to a microwave leftovers are great to take. I often take a can of soup to work and heat it for lunch.
I also like hawaiian salmon salad in a pita with some lettuce.
Mix a can of salmon with a cup of crushed pineapple, 1 cup of celery, 3/4 cup mayo, 3/4 teaspoon curry powder and a tablespoon parsley flakes. you can add nuts if you like.

Mexican Egg-Salad Wraps

Prep Time: 25 minutes
Start-to-Finish: 25 minutes

12 hard-boiled eggs, pealed, coarsely chopped
1/2 cup mayonnaise or salad dressing
1/4 cup finely chopped celery
1/4 to 1/2 teaspoon salt
1 can (4.5 oz) Old El Paso chopped green chiles
2 medium avocados, pitted, pealed, and coarsely chopped
2 teaspoons fresh lime juice
1 tablespoon finely chopped onion
1 package (11.5 oz) Old El Paso flour tortillas, 8 inch
1/3 cup small fresh cilantro leaves, stems removed
Fresh cilantro sprigs
Fresh medium strawberries

In large bowl, mix eggs, mayonnaise, celery, salt, and chiles. place avocado in medium bowl; sprinkle with lime juice. Add onion; mash with a spoon.
spread 1/4 cup avocado mixture on each tortilla to within 1/2 in of the edge. Spread each with about 1/3 cup egg salad mixture. Sprinkle cilantro leaves over each. Fold in sides of tortilla; roll up. Arrange wraps on large serving platter; garnish with cilantro sprigs and strawberries.

Makes 8 wraps

This is one of my fav recipes. I was flipping through the new pillsberry cookbook I got through the mail, wondering what to make for lunch. I wanted something quick and easy. Anyways, I hope you enjoy this yummy lunch wrap

Grilled Cheese Sandwich

INGREDIENTS
4 slices white bread
3 tablespoons butter, divided
2 slices Cheddar cheese
DIRECTIONS
Preheat skillet over medium heat. Generously butter one side of a slice of bread. Place bread butter-side-down onto skillet bottom and add 1 slice of cheese. Butter a second slice of bread on one side and place butter-side-up on top of sandwich. Grill until lightly browned and flip over; continue grilling until cheese is melted. Repeat with remaining 2 slices of bread, butter and slice of cheese.

do u like grilled cheese? try this:

2 slices bread
2 slices cheese- provolone if you have it but any kind will work
3 basil leaves
1 slice of tomato
butter

butter the bread and heat skillet to about med/low heat. add cheese, basil leaves, and tomato slice.
place the sandwich in the skillet. cook until bread is golden brown and cheese is melted!

I don't know if you like this or not, but I enjoy tuna salad (can of tuna, mayo, and relish mix together and put on bread, toast, or bagel) and chicken salad (same ingredients and steps except tuna) but usually, i get chicken salad from Target at the deli it is so good

hmmm besides tuna salad i do love roastbeef with havarti cheese! mmmmm and Boar's Head makes this horseradish sauce that's amazing ! yummm. now i'm hungry!
