SMOTHERED CHICKEN
1 whole chicken
Flour
Salt to taste
Pepper to taste
1 1/2 c. diced celery
1 1/2 c. diced onions
Milk
Cut chicken into pieces. Salt and pepper chicken and then flour. Place chicken in an oiled 13 x 9 x 2 baking pan. Bake at 350 degree oven. Brown chicken on both sides for 45 minutes. Mix celery and onions together. Put celery and onion mixture over chicken and add milk until chicken is covered. Bake for 20 minutes more. Then serve.

Smothered Chicken
4 boneless skinless chicken breast halves
garlic powder
seasoning salt
1 tablespoon vegetable oil
1 (4 1/2 ounce) jar sliced mushrooms, drained
1 cup shredded Mexican blend cheese (4 oz.)
1/2 cup chopped green onions
1/2 cup bacon, crumbled
Flatten chicken to 1/4-inch thickness.
Sprinkle with spices.
In a large non-stick skillet over medium heat, brown chicken in oil for 4 minutes, turn.
Top with mushrooms, onion, cheese and bacon.
Cover and cook until chicken juices run clear and cheese is melted, about 4 minutes.

Soul Smothered Chicken
INGREDIENTS
* 1/2 cup butter
* 1 whole chicken, cut into pieces
* 1 teaspoon salt
* 1/2 teaspoon ground black pepper
* 3/4 cup all-purpose flour
* 3 cups chopped yellow onions
* 1 cup chopped celery
* 3 cloves garlic, chopped
* 2 cups chopped carrots
* 3 cups chicken broth
* 3 tablespoons all-purpose flour
* 1/4 teaspoon cayenne pepper
* 2 teaspoons salt
* 1/4 teaspoon ground black pepper
DIRECTIONS
1. Melt the butter in a large skillet over medium-high heat. Season chicken pieces with 1 teaspoon salt and 1/2 teaspoon pepper. Dredge in 3/4 cup flour, place in the skillet, and brown on all sides. Set chicken aside, and drain skillet, reserving about 1 tablespoon butter.
2. Reduce skillet heat to medium-low, and stir in onions, celery, garlic, and carrots. Cook 5 minutes, until tender. Gradually mix in chicken broth and flour. Season with cayenne pepper and remaining salt and pepper. Bring to a boil, and reduce heat to low.
3. Return chicken to the skillet, cover, and continue cooking 30 minutes, until chicken juices run clear and gravy has thickened.
