TASTY PORK CHOPS AND RICE

5-6 pork chops
season all (or seasoning to your taste)
worcestershire sauce
1 can cream of chicken soup
4 oz tomatoe sauce (1/2 of an 8 oz can)
1 beef bouillon cube
2 cups boiling water
3/4 cup uncooked rice

In large skillet brown the pork chops, covering them with Season-All to taste and Worcestershire sauce (I use the tines of a fork to pierce the chops so the sauce soaks through).
While chops are browning, dissolve the beef cube in the boiling water. In a bowl, mix with the remaining ingredients.

Remove chops from the skillet and set aside. Turn the heat down to low. Pour the rice mixture into the skillet; place the chops on top.

Cover the skillet with a lid, immer on low heat 45 minutes, or until done.

During the cooking, add water as needed to keep the mixture from drying out. When the rice is done and the chops are tender, serve.

...The list is endless. I will give you my recipe I use when I have pork. It is DELICIOUS!

Smashed Potatoes
5 lbs potatoes
16 ounces low-fat sour cream
1/3 cup half-and-half (to taste)
1/2 cup reduced-fat extra sharp cheddar cheese
1 green onion
salt and pepper
1 tablespoon onion powder
1 tablespoon garlic salt
1 tablespoon italian seasoning

Fill large pot with warm water. Place on stove over high heat and salt water. Bring to rolling boil.
Rinse potatoes and pat dry. Cut potatoes into 1/8th and drop into water.
Cook potatoes until they are fork tender.
Drain potatoes and place back in cooking pot, return to burner.
Add Sour cream, chopped green onion, Cheese, half and half, and seasoning.
Mash potatoes but leave some good sized chunks.
Enjoy!

I like Garlic Mashed Potatoes myself =)

* 7 cups peeled and cubed baking potatoes
* 6 cloves garlic, peeled
* 1/2 cup milk or heavy cream
* 1/4 cup Parmesan cheese, grated *fresh is best*
* 2-4 tablespoons butter
* 1/2 teaspoon salt
* 1/8 teaspoon pepper


Place potatoes and garlic in a saucepan. Cover with water; bring to a boil. Reduce heat. Simmer 20 minutes; drain. Place drained potatoes and garlic in a mixing bowl. Add remaining ingredients; beat with mixer until smooth. Serves 6 to 8.

SCALLOPED POTATOES AU GRATIN

potatoes
onion slices
Wondra flour
butter
salt and pepper
shredded Cheddar cheese
Cream of Mushroom soup
French onion chip dip

Note: Quantities are not specific in this recipe, so vary according to your own taste and feel free to improvise with what you have.

Slice potatoes and arrange in the bottom of an ovenproof casserole or baking dish. Top with onion slices, salt and pepper. Sprinkle with a thin layer of shredded Cheddar cheese.

In a sauce pan, warm 1 can of Cream of Mushroom soup and mix with 1 pint of French onion chip dip. Pour the mixture over potatoes. If soup mixture becomes too thick, add some milk to thin it down.

Sprinkle Wondra flour over the top and add a couple of pats of butter.

Repeat the first step, adding layers until dish is full.

Bake at 350°F in oven for about 90 minutes or until golden brown.

These will be a hit for everyone. I never have any leftover!

CANDIED YAMS IN ORANGE CUPS

4 sweet potatoes
3 oranges, halved
3 oz. orange curacao liquore
2 tbsp. butter
1/2 tsp. cinnamon
Salt and pepper

1. Bake potatoes at 400 degrees until tender. Remove pulp and mash.

2. Add curacao, butter, cinnamon, salt and pepper. Beat until smooth and fluffy.

3. Remove pulp from oranges and fill shells with potato mixture.

4. Cover a cookie sheet with aluminum foil and place shells on top. Heat in oven for 15 minutes at 400 degrees.

Serves 6. NOTE: Pulp from oranges can be used to make juice.

Whenever I fix pork chops, I always fix homemade scalloped potatoes to go with it. Yummy!

Grilled Potato and Onion Salad

1 lb. medium red potatoes, quartered
1 medium red onion, peeled, cut into thick slices
1/2 cup KRAFT Italian Dressing, divided



PLACE potatoes in large saucepan. Add enough water to cover potatoes. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer 20 minutes or just until potatoes are tender. Drain well.
PREHEAT grill to medium-high heat. Place potatoes in large bowl. Add 2 Tbsp. of the dressing; toss to coat. Place potatoes and onions on grate of grill. Brush onions with 1 Tbsp. of the remaining dressing.
GRILL 10 minutes or until browned, turning occasionally and brushing the onions with 1 Tbsp. of the remaining dressing. Place potatoes and onions in serving bowl. Add remaining 1/4 cup dressing; toss to coat. Serve warm.
