I prefer using brown rice for all of my rice dishes. The trick is to saute the rice in a little bit of oil before adding the water. I like to use a garlic infused oil which will impart some flavor. Don't forget to add salt either. Adding salt with the water will ensure the rice is seasoned. Adding the salt after it is cooked will just make it taste salty.
Here's my recipe for Spanish Rice.
Ingredients
3 cups cooked brown rice
1 large onion, chopped
4 stalks celery, diced
1 large bell pepper, chopped
2 cloves garlic, minced
1 tablespoon vegetable oil
1 teaspoon chili powder
1 teaspoon cumin
1 cup chopped tomatoes
coarse salt
1/2 teaspoon oregano
freshly ground black pepper
1/2 cup grated Monterey jack cheese
Method
Sauté onion, celery, pepper, and garlic in oil. Add chili powder and cumin. When fragrant, add tomatoes, salt, oregano, and pepper. When tomatoes are cooked through, stir in the rice
Top with the grated cheese and bake long enough to melt the cheese

What I do is on the bottom of your sauce pan add 2 tbs of olive oil, then add 1 cup of brown rice to 2 cups of water. Then add a package of chicken or beef stock. They come in packages or cubes. When the rice is done which takes about 45 minutes. Let it sit and then add 3 or 4 sprigs of fresh chopped parsley and mix in. On top you can also sprinkle a little parmesean cheese too, but that is optional. You can also add 1 can of cream of mushroom soup to the rice too, but it does add more calories. So it is up to you. But brown rice is the best. I use it all the time. White rice has very little fiber or vitamins.

First of all, brown rice takes a long time to cook. To save yourself annoyance soak the portion you want to use in water either the morning that you cook or the night before. It will save you time.
A nice tasty recipe is terriaki rice. the base is soya sauce, a little ginger, garlic and some chicken stock. Add some chopped up onions and come diced red capsicum (pepper). The idea is to cook the rice in the stock and the soya sauce and let it boil down to nothing so you don't have to strain it.
Tips... - if the water/sauce boils down and you think the rice needs more cooking, put in another half cup.
-if the rice is boiling to much, leave it on a simmer.
- try to get reduced salt stock and reduced salt soya sauce, its better for you
- use about two tablespoons of soya sauce, as much garlic as you fancy, one teaspoon of diced/grated fresh ginger. One diced capsicum/pepper, one diced onion. :)

Well to spice it up a bit you can cut up some parsley and add it to your brown rice.
Tastes extremely good! Add a little salt if you need to.

if you cook the rice ,only half time and leave it dente,use only just enough water while cooking,than let it dry steam,and take it in a frying pan or wok with a bit of butter and
fry the rice.
that way it brings the good taste out.

I like to make stir fryes. i simmer vegetables, throw in soy sauce, and them put it all on top of the rice-it is delicious!!
also you can just put soy sauce on the rice by itself...not sure how nutritious that is though, but it is very good!

I find that if I use a beef stock it really adds nice flavour or chicken stock, but the beef stock does the trick.
