so that anything thrown up by the horse in front doesnt cut their faces and blinkers to stop them seeing anything at the side of them so they only see forward

They are called blinkers. They have two purposes.
1) They restrict what the horse sees. The horse can only see straight in front of him, therefore will pay attention to the race and not all the excitement going on all around him.

2) They protect the horses eyes from flying dirt and dust.

They are blinkers.
They keep the horse focused on the route ahead and not get preoccupied with the other horses around it.

Not all horses need them but some do get put off by the others in the race.

'this may be more answer than you want...a horse's eye is located on the side of it's head , kinda like our ear's , ...that's so he can see if any predators are gonna get 'em. Each eye is hooked up to it's own side of the brain, and is independent to the other.
That's why horses 'spook' sometimes, one eye thinks it knows something the other eye don't...a horse has a sense of space, just like we do, and if another animal is 'in' his space, he tends to reclaim or forfeit it,..so,..people working horses in very close quarters try to limit the peripheral vision of there horse by putting 'blinders' on the head gear.
Trainers will sometimes do similar things with younger horses to focus the two halves of the brain, and teach the horse things like loading in a trailer, or crossing puddles , or 'facing', ...
It's challenging sometimes trying to figger out which side of the horse is the most receptive to your attention... good trainers just seem to 'know' this 'horse-sense', and use it to there advantage.

So that the horses will not look or get destrated by eaither other horses or a person in the In-field or something like that. It also helps from dirt and little rocks getting in their eyes.

They wear a pull on, over the head thing with blinkers on so that they only see directly in front of them and run straighter

It blocks out their peripheral vision,so they will not be distracted by what is to the left or right of them. Not a bad idea for us humans either!
