If during the plagues Egypt was hit with a hail storm that killed all the livestock (cattle, horses, asses, etc...) and then lotus ate everything that was green - Then where did the Egyptians get the horses to pursue Moses a few days later and what did the horses eat to have the energy to do so?

That's a good question, and one I hadn't thought of. I've read that it is unlikely that the Hebrews were slaves in Egypt, as it was illegal to enslave foreign guests. Instead, they were probably conscripted to work on the temples and monuments, as a way to pay taxes, just like every other Egyptian citizen.
