I just got a new icecream maker and I would like to make a good, rich icecream, such as dark chocolate icecream. What is a good recipe for this, using an icecream maker?

Dark Chocolate Ice Cream

Ingredients
2 cups milk
1 cup sugar
6 egg yolks, lightly beaten
3 ounces coarsely grated bittersweet chocolate
2 teaspoons pure vanilla extract
1 pint heavy cream

Method
Beat milk, sugar and egg yolks in the top of a double boiler until frothy. Set over simmering water and heat 15 minutes, stirring now and then at first, constantly toward the end. Add the chocolate, stirring until well blended. Cool, add vanilla and cream. Freeze in a crank – type freezer [hand or electric] or automatic ice cream machine, following the manufacturer’s directions.

A rich chocolate ice cream with chocolate chips and heavy cream.
INGREDIENTS:
2 1/2 ounces unsweetened chocolate
1 cup granulated sugar
1 cup milk
2 cups heavy cream
1 teaspoon vanilla
1/4 to 1/2 cup semisweet chocolate chips
chopped nuts or mini marshmallows, if desired

PREPARATION:
In a 2-quart saucepan, heat chocolate, sugar, milk, cream and vanilla until chocolate is melted. Cool. Pour the mixture into a blender and process until smooth. Add chocolate chips (or chunks of your favorite chocolate bar) and blend until chips are broken up.
Pour into prepared ice cream maker and freeze according to manufacturer's directions. Just before done, add chopped nuts or marshmallows.
Makes 1 quart.

Dark Chocolate Cheesecake Ice Cream

3 oz dark chocolate bar melted
3 eggs
3/4 cup sugar
2 cup heavy cream
1 cup half and half
8 oz cream cheese softened

Melt chocolate over double boiler or in microwave. Let cool at room temperature. In blender or food processor, combine all ingredients including melted chocolate. Mix well. Process in ice cream maker according to manufacturer's instructions.

I have made this before. It is very good...very similar to Breyer's Peach ice cream..it is old recipe (hand crank, but just substitute an electric ice cream maker..)

Fresh Peach Ice Cream

Only 46 calories are contained in a medium peach and peaches supply considerable Vitamin A.

2 generous cups crushed fresh ripe peaches
1/3 cup sugar
1/8 tsp. almond extract

1 cup sugar
1/8 tsp. salt
2 TBSP. flour
2 large eggs, slightly beaten
1 ½ cups milk
2 tsp. pure vanilla extract
2 cups heavy cream

Combine peaches with 1/3 cup sugar and almond extract. Set aside.

Combine the 1 cup sugar, salt, and flour in a saucepan. Blend in eggs and ¼ cup of the milk. Add remaining milk and cook over low heat until mixture coats a metal spoon, stirring constantly. Remove from heat and cool. Stir in pure vanilla extract and heavy cream.

Pour into a 2 quart freezer can. Place can in freezer tub. Cover with lid. Put on gear case and adjust it until the handle turns easily. Pack with coarse ice cream salt and crushed ice, using about 1 part salt to 8 parts ice. Turn the crank until it begins to slightly resist: The mixture is then about half-frozen.

Remove gear case. Wipe off lid so that no salt gets into the ice cream. Remove lid and add crushed peaches. Cover with lid, adjust gear case, and pack with salt and ice as in above proportions. Turn crank with increased speed until it is too hard to turn. (Ice cream is frozen at this point.)

Remove gear case, lid and dasher. Pack down ice cream with a spoon. Cover can with a piece of cloth or aluminum foil. Replace lid. Cork or cover hole in top of lid. (Drain out water and packed ice.)

Put ice cream in freezer for 2 hours to firm. Makes ½ gallon.
