you can, but it will have that olive flavor which is not suitable for pancakes.
oil makes the pancake last longer cooked and not crack. though you can also cook pancakes without the oil. remember olive oil is also fat - though it is healthier in terms of cholesterol, it is still is a fat, it has a lot of those unwanted calories!
for better pancakes, mix your pancake mix a day before you are going to cook it. put the mix in a bowl and cover it with the cling film touching the surface of the mix, to avoid the mix from forming a skin the next day. letting it sit in the fridge for a day, makes the mix more homogenous.

I use extra light olive oil for pancakes and baking too and they come out just fine....I do not know if the flavor of a stronger olive oil would change the flavor of the finished product or not but the extra light works great.

Yes you can use Olive Oyl (at least when Popeye's finished).
The taste is negligible. The only thing that you have to be careful of whenever you use olive oil is the temperature, olive oil burn start to break down at a lower temperature than other oils.
I try to use olive oil in everything, much better for you than most others.

I use olive oil instead of vegetable oil a lot. If you have a strong olive oil you might taste it a little bit, but it will be ok. It is much better for you!

Alittle unsalted butter may be extra effectual in case you have it. If no longer you need to use some better Virgin Olive Oil, the better virgin does not talk over with how wholesome it particularly is, in basic terms how ordinary or sturdy the flavour is. you may no longer need lots of the two of them as long as you do not have the range directly to severe and that they start to adhere. in the experience that your using a non stick pan nevertheless use alittle oil or butter. i'm previous shaped and in basic terms use casted iron cookware. in case you're using casted iron bear in concepts the season the pan nicely formerly use. I don't think so because the olive taste would pop out and it wouldn't taste like real pancakes. I use canola

i usually make pancakes with milk, flour and eggs.
I think you would get a different result with olive oil - it may even affect the eggs.
If you're allergic to milk you could try rice milk (not as nice though)
