Title: QUICK & EASY CHOCOLATE CAKE

4 oz Hershey's Baking Chocolate
-(Unsweetened),
- broken into pieces
1/4 c Butter or margarine
1 2/3 c Boiling water
2 1/3 c All-purpose flour
2 c Sugar
1/2 c Dairy sour cream
2 Eggs
2 ts Baking soda
1 ts Salt
1 ts Vanilla extract
Heat oven to 350 degrees Fahrenheit. Grease and flour 13x9x2-inch baking
pan. In large mixer bowl, combine chocolate, butter and water; with
spoon, stir until chocolate is melted and mixture is smooth. Add flour,
sugar, sour cream, eggs, baking soda, salt and vanilla; beat on low
speed of electric mixer until smooth. Pour batter into prepared pan.
Bake 35 to 40 minutes or until wooden pick inserted in center comes out
clean. Cool completely in pan on wire rack. Frost as desired. 12 to 15
servings.

Title: QUICK WHITE CAKE* (REB) 40-45

2 c Sifted cake flour
1 ts Salt
1 1/2 c Sugar
1/2 c Vegetable oil
1 c Skim milk
3 ts Baking powder
4 Egg whites
1 ts Vanilla
Margarine (optional)
*If desired, use plan confectioners' sugar frosting. These cakes may be
filled with jelly, preserves, or lemon cornstarch filling.
Preheat oven to 350* (moderate). Prepare a 10-inch tube pan or two 8-inch
layer pans by greasing lightly with oil or margarine and dusting with
flour. Sift together in a mixing bowl the flour, salt, and sugar. Add the
oil and 2/3 cup of the milk. Stir until the flour is dampened and beat 1
minute, Stir in the baking powder and add the remaining 1/2 cup milk, the
egg whites, and vanilla. Beat 2 minutes. pour into the pans and bake 25-40
minutes.

1 c Shortening
2 c Sugar
4 Eggs
3 c Cake flour; sifted
2 1/2 ts Baking powder
1/2 ts Salt
1 c Milk
1 ts Almond extract
1 ts Vanilla extract
Recipe by: Southern Living
Preparation Time: 0:15
Cream shortening; gradually add sugar, beating well at
medium speed of an electric mixer. Add eggs, one at a
time, beating well after each addition. Combine flour,
baking powder, and salt; add to creamed mixture alternately
with milk, beginning and ending with flour mixture. Mix
after each addition. Stir in flavorings. Pour batter into
3 greased and floured 9-inch round cakepans. Bake at 375
degrees for 20 to 25 minutes or until a wooden pick
inserted in center comes out clean. Cool in pans 10
minutes; remove from pans, and let cool completely on wire
racks. Frost as desired. Yield: one 3-layer cake.
YELLOW CUPCAKES: Spoon batter into paper-lined muffin pans,
filling each cup half full. Bake at 375 degrees for 20
minutes. Remove from pans, and let cool on wire racks.
Frost as desired. Yield: 3 dozen.

I’ve used cake recipes from allrecipes.com and foodnetwork.com. I like the fact that there are reviews of the recipes by individuals who have tried them and often have helpful suggestions. Also, joyofbaking.com contains some basic explanations concerning different types of cakes and different techniques, as well as some good recipes. Baking from scratch is not difficult as long as you follow the instructions. Correct measurements and mixing techniques are important. When you become more experienced you can make changes and experiment in order to try to achieve exactly the results that you want.

Sorry I don't do recipes partly because I've seen so many bad ones -read them very carefully- but mostly because I believe that technique is much more important.
The key to making a cake from scratch successfully is accurately measuring all your ingredients.
You will need two sets of measuring cups
one for wet and one for dry- they are not interchangeable. You will also need to know how to use them
You will need measuring spoons and again know how to use them
You will of course need all the rest of the right tools and...................you will need to buy an oven thermometer and determine how accurate the thermostat on your oven is and adjust accordingly

I would go to www.foodnetwork.com , look up paula dean ... she has some realy good informative cookbooks and there are vids there you can watch to show you step by step for almost anything....
