A short version of the differences is:

Home Basic: missing aeroglass, media center, and many other features. I'd advise against it.

Home Premium: your standard windows. It has everything most users will want (Media center, Aeroglass)

Business: has better networking, but lacks the media center type features

Ultimate: has everything. Is the best, but is unnecessary for most users. There are a few bonus because it's the most expensive.

I'm getting Ultimate because I'm a computer geek. I'm getting my mom Home Premium because she doesn't have any use for the features in Ultimate and the money saved is more useful elsewhere.
