I'm not sure of what the term is in your state, but in my state you would be charged with battery and felony obstruction.
In order for us to carry pepper spray in this state, we have to be sprayed with it and it videotaped. This shows how long we are immobilized and could be used in court to justify the deadly force we used to defend ourselves.
The safest way of fleeing is just plain 'ol running on foot. Unless you happen to get the one officer who believes in the motto "I don't run after you, I run over you." Or the officer whose partner is a patrol/attack dog.

Assaulting a Police Officer is a felony crime in this state and in many others. Mace is an assault.
If you attempt to point a weapon (yes, MACE is a weapon) at a police officer, or anyone else, that is justifiable reason for deadly force. The reason is, the officer does not know what you are pointing at him. For all he knows, you are spraying nerve poison at him.
If you want to get away from the officer, than you are limited to trying to out run him, his buddies, other patrol cars, the radio calls, the helicopter, and finally, the police dog.

This would be at least Aggravated Assault( in Illinois). And yes, many officers would use deadly force to subdue you. Based on the fact that the officer does not know what you are planning to do. Yes, officers have been trained to fight through OC spray. However, that was a controlled environment. This would also depend on your next action. Are you spraying and fleeing, spraying and attacking? Etc.....

If you flee you are gonna get hurt. If you flee after spraying mace at an officer (an overtly aggressive act) you are really gonna get hurt. Don't be dumb, man, if you are caught, you are caught-don't fight and don't flee.

It depends on your actions; to the police officer, he may perceive you releasing a weapon (offensive or defensive) towards him/her. To me as a law enforcement official, this would seem a threat to me at the time. who knows if the weapon in my face is a knife, gun, or mace?
Even after maced, you're actions that follow may lead a officer to believe you may reach for his/her weapon, which allows for deadly reaction.
Bottom line, DON'T MACE POLICE OFFICERS, YOU MAY DIE!!!

Yes, since if you attempt to mace, that means the officer loses control and his life could be in danger, if you attempted to mace him, he would shoot you.
