cellulose is amazing material, elastic shape of walls are the key. it is also resistant to the sharp edges of the crystals formed when liquids freeze.

sap is a hydrocarbon, unlike water, it shrinks when it freezes, never expands. water is the anomaly here. and a mix of water and hydrocarbon means almost a net change of nothing as it freezes, so it just stays still. sap remains in place until it warms enuff to start running again.

Put simply they don't. They go into a suspended animation and wait until the weather warms up.
