How can Keylogging applications run in the background and how do i detect them?

I wanted to know how keylogging applictaions can run without the process showing up on task manager.
Right now i use Process Explorer from systeminternals to kill all my processes. Is there a better program that shows all running applications including the keyloggers? I also use hijack this.

I have allot of good antispyware software that will remove any keylogger it finds. I just want to find out how it can run and how i can kill the process.
