Clean and dry them on paper towels. Sautee them in olive oil or butter and onions and garlic. You can add some Parmesan cheese at the end and sometime this dish is garnished with poached eggs.

I usually cut the stem off just above the bottom 1 or 2 leaves.

Only the small ones. Snap off the big ones and dont' use them.
