See can you get mini palm trees. Lay out a bit of sand in a dish surrounding the trees and put little shell all around the tree. Get little treasure boxes to put in the sand too.
so basically you will need:
A container that is about 3/4 inch high, size of a salad plate
beach sand
miniature shells and tresure boxes
have grass or straw mats under the plates or under the place where the cake sits
You can also get empty glass coke bottles, and layer them with things (making sure they dont get all mixed up so you can actually see the shells)- for example:
blue gel
sand
seashells
sand
mini seahorses
sand
and to top it off you can get little mini umbrellas.
Fill a glass bowl with water, put blue food coloring in it. Drop in a few glow sticks of whatever color and top the bowl with a floating ship...

I like the orchid idea tha was suggested. Flowers, of course, are a traditional wedding centerpiece. Another approach could be a creative collection of things tropical that reflect your theme as well as personal things related to the two of you and your interests. I also have seen couples "name" each of their tables (rather than have numbers) based on the theme or their interests. I always think Martha Stewart has great creative ideas -- either online or in her magazines.

You could just use big, palm type leaves and tropical flowers. Sometimes it looks nice to fill the vase with flowers itself or use shells or crushed class for a water-type look. Hope it works out.

wintry climate wedding ceremony the following with a snowflake/snow subject, tables are lengthy rectangles. Ours are silver cord sleighs crammed with red/white roses and asiatic lilies, this sits on a silver gossamer runner contained in the middle of the table with votive candles and rose petals going out from both end of the sleigh to the top of the tables. Dishes are sq. white charger with Black sq. dinner plate on genuine and red napkins with a want of a silver glittered snowflake tree ornament positioned on the serviette. Wedding12/5/09

This may be a bit off the wall, but we had hand-made baskets on the table filled with wedding candy bars. We then had purple index cards around the table. We asked our guests to please record one favorite moment they had of us on the index card and to place it in the basket in exchange for a candy bar. Our bridesmaids collected the baskets (which were later dispersed to family members) and the index cards for us. We now have a wonderful photo album full of our guests favorite memories of us.
